- In a small bowl, combine the salt, cinnamon, cardamom and pepper. Place sweet potatoes in a large bowl. Sprinkle with 1 teaspoon spice mixture and 3 teaspoons oil; toss to coat. , Arrange potatoes in a single layer in a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, at 425° for 10 minutes., Rub the remaining oil over pork; rub with remaining spice mixture. Place over the sweet potatoes. Bake for 15 minutes. , Cut each apple into eight wedges. turn pork; arrange apples around meat. Bake 15 minutes longer or until a thermometer reads 160°.

- In a shallow bowl, mix flour, salt and pepper. Cut tenderloin into 12 slices; pound each with a meat mallet to 1/4-in. thickness. Dip pork in flour mixture to coat both sides; shake off excess., In a large skillet coated with cooking spray, heat oil over medium-high heat; brown pork in batches. Remove from pan., Add sweet potatoes, cranberries and broth to same pan. Bring to a boil. Reduce heat; simmer, covered, 4-6 minutes or until potatoes are almost tender. Stir in mustard. , Return pork to pan; add apple and green onions. Return to a boil. Reduce heat; simmer, covered, 4-6 minutes or until pork and sweet potatoes are tender.

SWEET POTATO APPLE PORK CHOPS!
I fell in love with this recipe, when I use to cook this for my Personal Chef Clients! Its one of my family's Fall Favorites! :)

Steps:
- 1. Heat oil in large non-stick skillet, medium heat. Add pork chops, cook 3 minutes on each side thick 5 minutes each side).
- 2. Peel, cut up sweet potatoes into small cubes. Slice onions and dice. Remove chops from skillet and keep warm.
- 3. Add sweet potatoes and onion to skillet, saute 3 to 4 minutes, until tender.
- 4. Combine brown sugar, cornstarch, salt (optional), vinegar, and orange juice. Mix well. My Family is low sodium diet, so I don't use salt in my recipe for my family.
- 5. Return chops to skillet with sweet potatoes and onions, pour Orange Juice mixture over pork chops.
- 6. Cover skillet, reduce heat, and simmer for 40 to 60 minutes or until chops are tender. The last 15 minutes of cooking, add chopped apple on top of pork chops.
- 7. Season lightly with salt and pepper to enhance the flavors and based on your tastes!
- 8. Cooking Tip Optional: Add a 2 Tablespoons of Gran Marnier at the end of cooking process to give the sauce some additional flair.
PORK CHOPS WITH APPLES, ONIONS, AND SWEET POTATOES
This is so easy, so good, and so versatile! I've used pork chops with and without bones, pork loin, and pork roast. You can sprinkle the brown sugar, salt, and pepper on the different layers or all at the end, as mentioned in the recipe. Play around with the brown sugar and spices to your taste.

- Preheat oven to 375 degrees F (190 degrees C).
- Season pork chops with salt and pepper to taste, and arrange in a medium oven safe skillet. Top pork chops with onions, sweet potatoes, and apples. Sprinkle with brown sugar. Season with 2 teaspoons pepper and 1 teaspoon salt.
- Cover, and bake 1 hour in the preheated oven, until sweet potatoes are tender and pork chops have reached an internal temperature of 145 degrees F (63 degrees C).

ROAST PORK AND SWEET POTATOES

- Position a rack in the upper third of the oven; preheat to 450 degrees F. Pierce the pork all over with a fork. Combine the brown sugar, sage, garlic, 3/4 teaspoon salt and a few grinds of black pepper in a bowl; rub all over the pork.
- Toss the sweet potatoes and onion with 2 tablespoons olive oil and the cayenne on a baking sheet; season with salt and black pepper. Roast, tossing once, until golden, 20 minutes; set aside.
- Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the pork and cook, turning, until golden, 5 minutes; transfer to the baking sheet with the vegetables (reserve the skillet). Roast until the sweet potatoes are tender and a thermometer inserted into the center of the pork registers 145 degrees F, 11 to 13 minutes.
- Meanwhile, add the broth to the skillet; bring to a simmer over medium heat, scraping up any browned bits with a wooden spoon. Stir in the mustard, chives and a few grinds of black pepper. Slice the pork; drizzle with the pan sauce. Serve with the roasted vegetables.

- Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
- Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
- Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.

- Flatten pork slices to 1/2 inch thickness.
- Combine the thyme, paprika, salt and pepper; sprinkle over both sides of pork.
- Broil 3-4 inches from the heat for 3-4 minutes on each side or until meat juices run clear; keep warm.
- In a nonstick skillet, saute onions and garlic in butter until tender.
- Add apples; cook and stir for 2 minutes or until apples are crisp-tender.
- Combine the cornstarch, broth and apple juice until smooth; stir into apple mixture.
