HEARTY RIBS AND BEANS

Hearty Ribs and Beans image

Steps:

  • Place ribs in an ungreased 13-in. x 9-in. baking dish; add water. Cover and bake at 350° for 1-1/2 hours. Drain, reserving liquid; skim fat. Set ribs aside. , Add enough water to liquid to equal 1 cup; place in a saucepan. Add the tomato sauce, soup mix, brown sugar, mustard and hot sauce. Simmer for 10 minutes; reserve 1/2 cup. , To the remaining sauce, add the beans, celery and red pepper. Pour into the baking dish; add ribs. Pour reserved sauce over ribs. Cover and bake for 45 minutes.

1/4 cup water
1 can (14-1/2 ounces) tomato sauce
1 envelope onion soup mix
1/3 cup packed brown sugar
2 tablespoons prepared mustard
1/8 teaspoon hot pepper sauce
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
2 cans (15-1/2 ounces each) kidney beans, rinsed and drained
1-1/2 cups thinly sliced celery
1 sweet red pepper, thinly sliced

Steps:

  • Trim fat from meat. Sprinkle meat with Italian seasoning, rosemary, and pepper. Place meat in a 3-1/2- to 4-quart slow cooker. Place onion, beans, and undrained tomatoes on meat in cooker. Pour wine over mixture.
  • Cover; cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4-1/2 hours.
  • Using a slotted spoon, transfer meat and bean mixture to a serving platter. Spoon some of the cooking liquid over meat and beans. If desired, sprinkle individual servings with Parmesan cheese.

  • Heat 2 tablespoons of oil in a large heavy bottomed pot over medium high heat. Season the ribs with a sprinkle of salt. Working in batches so you don’t crowd the pan, brown the ribs on all sides. Remove all the ribs from the pot.
  • Add the remaining oil and onion and cook, stirring often, until the onion is brown. Add the garlic and cook for 1 more minute.
  • Add the crushed tomatoes and scrape the bottom of the pot with your wooden spoon to remove any of the tasty browned spots. Add the cider, wine or bubbles, parsley, thyme, rosemary, sage and bay leaves. Add the pork back to the pot, ensuring that it is in a single layer, standing the ribs on their ends if need be.
  • Cook, covered, over very low heat for 3-4 hours, or until the ribs are very tender. You’ll want to keep the ribs at a very low simmer.
