PORK CHOPS AND SAUERKRAUT
This dish is a simple one pan meal for two people with healthy appetites, or an entree for 4 when served with salad, bread, and of course dessert. Eat Hearty!

Steps:
- Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.
- Add the garlic, onion, sauerkraut, caraway seed, apple juice, and salt and pepper to taste to the hot skillet. Saute for 3 to 4 minutes. Lay browned pork chops on top of sauerkraut mixture, cover, reduce heat to low and cook for 20 minutes, stirring occasionally.

PORK AND SAUERKRAUT
Eating sauerkraut on New Year's is an old Pennsylvania Dutch tradition, said to bring good luck. The traditional meal consists of pork and sauerkraut served together, with sauerkraut representing luck and the pig representing rooting into the New Year. It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.

- Preheat oven to 400 degrees F (200 degrees C).
- Place pork roast in a large roasting pan. Season with salt and black pepper. Mix sauerkraut, water, onion, and apple together in a large bowl. Pour sauerkraut mixture over roast.
- Bake roast in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 300 degrees F (150 degrees C). Continue to cook roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), adding water if sauerkraut mixture looks dry, about 2 hours more.
- Remove roast from oven and allow to rest in a warm area before slicing, about 10 minutes.

SAUTEED PORK CHOPS WITH SAUERKRAUT

- In a heavy saucepan cook the bacon over moderate heat, stirring, until it is crisp, add the onion, and the caraway seeds, and cook the mixture, stirring, until the onion is golden. Add the sauerkraut and the apple juice and simmer the mixture, covered, for 20 minutes.
- While the sauerkraut mixture is the simmering, sprinkle both sides of the chops with salt, let the chops stand between layers of paper towel for 10 minutes, and season them with pepper. In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking and in it sauté the chops for 5 to 6 minutes on each side, or until they are just cooked through. Stir 1 tablespoon of the dill into the sauerkraut mixture and transfer the mixture to a heated platter. Top the sauerkraut mixture with the chops and sprinkle the chops with the remaining 1 tablespoon dill.
PORK CHOPS WITH SAUTEED APPLES AND SAUERKRAUT
5 Weight Watchers points per serving. This recipe is core. You could use slices of porkloin instead of pork chops just adjust the cooking time.

- Sprinkle pork chops with 1/4 tsp salt and 1/8 tsp pepper.
- Heat 1 teaspoon of oil in a large nonstick skillet over medium high heat.
- Add pork and cook until browned and cooked through, 3-4 minutes on each side.
- Transfer to a plate and keep warm.
- Heat remaining oil in skillet.
- Add apples and cinnamon.
- Cook, stirring occasionally, until apples begin to brown, 3-4 minutes. Add sauerkraut, caraway seeds and remaining salt and pepper. Cook 2-3 minutes.
- Serve with pork.
PORK SAUTEED WITH SAUERKRAUT
I'm not sure if this is authentically German, but with pork, beer and sauerkraut it's close enough for me. This is excellent served over spaetzle.

Steps:
- Render the fat out of the bacon, then cook until crisp.
- Removed the bacon from the pan, without draining oil.
- Saute the onion in the bacon fat until nicely caramelized.
- Add the pork strips and brown on all sides.
- Add salt and pepper to taste.
- Add garlic about 1 minute before the pork is done.
- Add the sauerkraut and saute about 10 minutes, until the sauerkraut starts to brown and wilt a bit.
- Sprinkle the sugar over the sauerkraut and mix in.
- Mix the paprika into the beer, and add to the pan.
- Cook until most of the beer has evaporated.
- Season with salt and pepper to taste.
- Serve with reserved bacon crumbled on top.
PORK STEAK AND SAUERKRAUT
This is for a single portion. It can be doubled or tripled. Be careful with the sauerkraut though. You might not want to triple it. Depends on how much sauerkraut you want. I like lots of sauerkraut with my pork steak.

- Remove excess fat from the pork steak.
- Preheat skillet.
- Add oil and spread evenly in skillet.
- Brown pork steak on both sides-- do not coat with flour.
- Add the sauerkraut to the pork steak and spread evenly over the top of it.
- Sprinkle the caraway seeds over sauerkraut.
- Pour the beer over the pork steak and 'kraut.
- Bring to a boil.
- Cover with a lid, lower heat and simmer until pork steak is tender and done.(about 30 minutes).
- The juice in the skillet might be a little cloudy in color but it is still good.
- Put on a dinner plate and enjoy!
