  • Meanwhile, whisk the creme fraeche, vinegar, olive oil and mustard in a large bowl to make a smooth dressing. Stir in the dill. Drain the onion, pat dry and add to the dressing. Add the potatoes and cucumber, season with salt and pepper and toss to coat.
  • Divide the watercress among 4 plates and add some potato salad to each. Flake the trout with your fingers and scatter on top. Serve with pumpernickel bread and/or pickled beets, if desired.

Cold Smoked Toro with Osetra Caviar, Creme Fraiche, and Daikon Sprouts image

Steps:

  • To make the toro cure and smoke the toro: Mix all the ingredients for the cure, except for the toro, in a bowl. Spread half of the cure on a sheet of parchment paper, lay the toro on top, and bury it with the remaining cure. Fold the parchment over, refrigerate, and lightly weigh it down (with a carton of milk, for example). Cure for 1 hour.
  • Remove the toro from the cure, rinse it in cold water, and dry well with a paper towel. Place it in a slotted pan. Light 2 pieces of fig wood over a burner, set the smoking branches in a large roasting pan, and place 4 large ring molds or ramekins in four corners of the pan. Set a wire rack on top of the molds, and a bag of ice on the wire rack. Finally, put the slotted pan over the ice and cover it quickly with tinfoil. Let it cold-smoke for 30 minutes. Vacuum-pack the toro and freeze just until it firms.
  • To serve: Shave the onion bulb, and thinly julienne the tops. On a deli slicer, shave the toro thinly, about 1/8-inch thick. Work slice by slice, laying each on a plate as quickly as possible. When all the toro is sliced, garnish each with several small dollops of caviar, small drops of creme fraiche, the onion bottoms and tops, and daikon sprouts. Using a small zester, grate lemon zest over the top. Serve with warm bread.

12 ounces salt
1 cup sugar
3 tablespoons vodka
1 teaspoon freshly ground white peppercorns
1 teaspoon ground coriander
1 teaspoon ground fennel seed
Grated zest of 1 lemon
Grated zest of 1 lime
Grated zest of 1 orange
8 ounces toro
1 spring onion or baby leek
1 tablespoon Osetra caviar
1 tablespoon creme fraiche, in squirt bottle
Daikon sprouts, for garnish
1 lemon
Warm bread, for garnish

Smoked Trout, Vodka Creme Fraiche and Crispy Potatoes image

Steps:

  • Cook the potatoes: Preheat the oven to 350 degrees F. Place the potatoes in a roasting pan and drizzle with olive oil. Season with salt and stir to evenly coat the potatoes. Roast for 30 to 35 minutes, until the potatoes are soft. Remove from the oven and allow to cool slightly. While the potatoes are still warm, gently press down on each one with the back of a pan or the side of a knife so it flattens to about 3/4 inch but stays intact (it's okay if the edges crack a bit, as they will get extra crisp when fried). Heat about 4 inches of canola oil in a heavy pot over medium heat. Once the oil reaches 350 degrees F, fry the crushed potatoes, in batches, for 5 to 6 minutes, until they become golden and crunchy. Drain on paper towels and season with salt.
  • Make the vodka creme fraiche: Combine the creme fraiche and vodka in a mixing bowl and whisk vigorously to whip and combine. Season lightly with salt. Refrigerate until ready to use.
  • Prepare the toppings: Carefully flake the trout fillets into small bite-size pieces. Fry the shallots: Separate the shallot slices into rings. Lightly dredge the rings in the flour. In a saute pan, heat 1/2 inch of olive oil to 350 degrees F. Fry the shallots for 2 to 3 minutes, until golden brown. Drain on paper towels and immediately season with kosher salt. To assemble, place a small dollop of vodka creme fraiche on each piece of potato and top it with a piece of trout. Garnish with the radish sprouts, chives and fried shallots. Season with fleur de sel and drizzle with a little extra-virgin olive oil.

1 1/2 pounds baby creamer potatoes in assorted colors
Extra-virgin olive oil
Kosher salt
Canola oil, for deep frying
1 cup creme fraiche
2 tablespoons vodka
8 to 10 ounces smoked trout, bones removed
1 shallot, thinly sliced
1/2 cup all-purpose flour
Olive oil, for shallow frying
Radish sprouts
Chopped fresh chives
Fleur de sel
Extra-virgin olive oil, for drizzling

PERFECT POTATO PANCAKES

I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

POTATO PANCAKES I

This is a traditional potato pancake recipe, and is a wonderful comfort food. Serve with applesauce and sour cream for a light dinner, or with roast chicken for a hearty winter meal. You can use more flour if the mixture seems too wet.
