Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Peel potatoes and cut into 3/4-inch cubes.
  • Transfer potatoes to a 2 1/2-quart shallow baking dish and toss with oil, rosemary, salt, and pepper.
  • Arrange potatoes in 1 layer and scatter bacon on top.
  • Bake until bacon is crisp and potatoes are cooked through and golden around edges, about 35 minutes.
  • Loosen potatoes with a metal spatula before removing from dish.

1 1/2 lbs boiling potatoes (3 or 4 medium)
2 teaspoons olive oil
1 teaspoon fresh rosemary, finely chopped

  • Pre heat oven to 350.
  • Grease 8 inch square dish.
  • Layer 1/2 potatoes,1/2 onion,1/2 bacon and 1/2 cheese in prepared dish;repeat layers.
  • Combine evaporated milk, egg and season salt in small bowl.
  • Pour evenly over potato mixture; cover.
  • Bake for 55-60 min.
  • Uncover and bake for an additional 5 min.
  • Let stand for 10-15 min before serving.

  • Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  • Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)
  • While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.
  • Add the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of the cheese to a stand mixer with a paddle attachment. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.
  • Spoon the mixture into the prepared baking dish. Sprinkle the crumbled bacon and remaining 1 cup cheese over the top and bake until the cheese is melted and the casserole is heated through, about 20 minutes.

  • Preheat the oven to 375 degrees F.
  • Rinse the cabbage under cold running water and remove the tough outer leaves. Cut the cabbage into quarters and remove the hard core. Cut the cabbage quarters into halves and place, rounded side down, in a roasting pan.
  • Cut the potatoes in half crosswise and peel. Cut the peeled potato halves into quarters, and arrange in the roasting pan, alternating with the cabbage pieces.
  • Fry the bacon in a heavy medium skillet for 7 minutes. Add the sliced onions, salt, and black pepper to the pan and cook until soft, about 5 minutes. Evenly distribute the bacon mixture and pan drippings over the vegetables, then pour the chicken stock on top. Tightly cover the pan with aluminum foil and bake for 1 1/2 hours.

  • Preheat the oven to 425 degrees F and spray a 3-quart casserole dish with nonstick spray. Set aside.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.

  • Preheat the oven to 400 degrees F.
  • Cook the bacon in a saute pan until crispy; let cool and then crumble.
  • Scrub the potatoes, then place them on baking sheets. Rub the potatoes with the canola oil and bake until tender, 45 minutes to 1 hour. Remove the potatoes and lower the oven temperature to 350 degrees F.
  • Slice the butter into pats and transfer to a large mixing bowl. Add the bacon and sour cream. With a sharp knife, cut each potato in half lengthwise and scrape out the insides into the mixing bowl. Tear up 3 of the skins and throw them in. Smash the potatoes with a potato masher.   • Preheat the oven to 350°F Peel and slice the potatoes about 1/2 inch thick, then cook in salted water just until tender (do not overcook). Drain and run under cold water to stop the cooking.
  • Cut half a pound of your favorite bacon cut into 2 inch pieces setting aside about 3 uncooked slices for top. In a frying pan, cook the balance of the bacon pieces until it just starts to crisp.
  • Slice the boiled eggs width wise about 1/4 inch thick.
  • Using a deep casserole dish, layer 1/3 of the potatoes, 1/3 of the egg slices, and 1/2 of the cooked bacon. Repeat the layer. For the final layer, add the remaining potatoes, eggs and the raw pieces of bacon on top. I like to pour the bacon fat remaining in the frying pan over the whole dish.

  • Dice the potatoes and transfer them into a pot. Pour just enough water to cover them and season with salt (I usually use about a tablespoon). Cover with a lid and bring to a boil. When boiling, reduce the heat to low and simmer uncovered until almost ready (see note).
  • Meanwhile, cook the bacon, if not cooked already. When done, transfer it onto a few sheets of kitchen paper towel to get rid of the excess fat.
  • In a small bowl, combine the Greek yogurt, cream cheese, mustard, salt and pepper and mix until smooth. Add milk and mix again.
  • When the potatoes are ready, drain the liquid. Transfer the potatoes into an oven-proof dish. Add cooked bacon pieces, sweet pickles and cream cheese mixture. Mix until well combined and top with shredded cheese.
