- In a small saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in seasonings., In a greased 13x9-in. baking dish, layer the potatoes, red pepper and corn. Top with the sauce, cheese and pepperoni. Bake, uncovered, at 375° for 25-30 minutes or until heated through.

- Preheat oven to 400°. Scrub potatoes; place on a microwave-safe plate. Pierce several times with a fork. Microwave, uncovered, on high until tender, 12-15 minutes., In a large skillet, heat oil over medium-high heat; saute mushrooms, pepper and onion until tender, 6-8 minutes. Add garlic; cook and stir 1 minute. Stir in pizza sauce and pepperoni; heat through., Place potatoes on a baking sheet; cut an "X" in the top of each. Fluff pulp with a fork. Top with vegetable mixture; sprinkle with cheese. Bake until cheese is melted, 5-7 minutes. If desired, sprinkle with oregano.

- Preheat the oven to 400°F(200°C) Gas Mark 6.
- Thinly slice the potatoes.
- Toss potatoes in the salt, pepper, garlic powder, and olive oil until evenly coated.
- Place on a tray and bake for 20-25 minutes until slightly crispy, turning halfway through the bake time.
- Lower the oven temperature to 350°F(180°C) Gas Mark 4.
- Place half of the potatoes into a round, oven proof cake tin.
- Top with half of the pizza sauce, and then half of the other toppings.
- Make another layer with all the toppings again.
- Finish off the dish with a bit more cheese and the pepperoni slices if you're using them.
- Bake for 15 minutes, or until the cheese is melted and turning golden brown.

POTATOES WITH PEPERONCINO
Potatoes will never taste the same after you have tried this dish. This preparation captures the beauty of the cooking of Basilicata: straightforward, simple, but full of brilliant flavor. Even if you are not so passionate about hot pepper, I encourage you not to be timid with the peperoncino in this dish. Of course, this kind of simple cooking depends on fine ingredients. Excellent olive oil and good potatoes are key. I like russets, but Yukon Gold or waxy varieties would work, too.

- Put the peperoncino flakes in the spice grinder or mortar and pestle, and grind to a fine powder.
- Put the potatoes in the 4-quart pot with water to cover them by about 2 inches, and bring to a boil. Cook just until the potatoes are easily pierced with a fork or sharp knife blade (don't let them get mushy), then drain and let them cool. Peel off the skins, and cut the potatoes crosswise into round slices, about 1/3 inch thick. Put the slices in a large warmed serving bowl, sprinkle the salt over them, and toss well to season. Cover the bowl with a cloth kitchen towel to keep them warm.
- To make the dressing: Pour the olive oil in the skillet, and set over medium heat for a couple of minutes. Strew the sliced garlic and sprinkle the ground peperoncino in the hot oil, and let both sizzle, stirring occasionally, until the garlic is golden, 2 to 3 minutes. Turn off the heat, and stir in the chopped parsley. Drizzle the seasoned oil from the skillet over the warm potatoes, and toss to coat all the slices. Serve immediately.
PASTA AGLIO, OLIO E PEPERONCINO
This late-night Roman staple is astonishingly full-flavored. Start the water before you do anything else, because the sauce takes less than 10 minutes start to finish.

- Put a pot of salted water on to boil. Remove the stems of the peperoncini, halve them lengthwise, then slice them into 1/4-inch lengths. Put the oil, garlic and peperoncini in a large deep pan set over medium-high heat, and cook until the garlic is translucent and golden, 2 to 3 minutes. Add the parsley to the pan, and turn off the heat.
- Meanwhile, cook the pasta until it is aldente, nearly but not quite done and still a bit chalky in the middle. Drain, and reserve 1 cup of the cooking liquid.
- When the oil has cooled for a couple of minutes, add 1/2 cup of the pasta cooking water, and reduce over high heat by about half. Add the pasta, and stir vigorously as it continues to cook. Add the reserved pasta water a bit at a time as necessary to finish cooking the pasta, and develop the thickened sauce. Season with salt, and serve.

- Peel and slice the potatoes 1/8-inch to 1/16-inch thick (6 cups).
- Preheat the oven to 325 degrees.
- Dribble 1 tablespoon olive oil into a 2-quart rectangular or oval baking dish 14 x 8 x 2 and scatter 1/4 of the minced garlic over the bottom of the pan.
