Steps:

  • Peel potatoes if the skin is tough, otherwise, just rinse and pat dry.
  • Cut potatoes into thin slices, but not all the way through. (A clever trick for doing this is to place your potato between two table knives--the knives will stop your cutting blade at an even level across potato).
  • Place potatoes in a microwave safe dish or pan.
  • Sprinkle with melted butter and chopped herbs--getting it down between slices.
  • Microwave for 10 minutes, rearranging potatoes after 5 minutes.
  • Check doneness and cook a bit more if necessary until potatoes are nearly done.
  • Sprinkle with grated cheese and Parmesan cheese.
  • Microwave for another 4 to 6 minutes until cheeses are melted and potatoes are soft.

Steps:

  • Slice the ends off the potatoes so they lie flat on either side.
  • Heat the oil in a pan over a medium-low heat. When hot, add the potatoes cut-side down. Fry for 5-7 mins, or until deep golden brown, then flip and fry on the other side. Add the butter to the pan to melt.
  • Scatter the garlic and herbs around the potatoes and season well. Carefully pour the stock around the veg, being aware of any hot butter that may splash out. Cover and simmer gently for 25-30 mins, or until the potatoes are tender, then serve.

EASY BAKED POTATO FANS (HASSELBACK POTATOES) - AN OREGON COTTAGE

From anoregoncottage.com
  • Cut each potato into "fans" by cutting almost through the potato. TIP: place the potato on a large wooden spoon, and with the potato sitting on the spoon, take a long knife and cut down until it touches the edges of the spoon. This allows you to evenly cut the potato into still-attached slices that you can fan out.
  • Place the potatoes on a lined or greased baking sheet and lightly pull the pieces apart to fan them. They won't all look perfectly fanned, but that's OK.
