POTICA (CROATIAN NUT ROLL)
We always looked forward to the holidays when we could get nut roll. Now our grandmas are unable to make them and it is not the same. This is the recipe from my Grandmother for nut roll.

Steps:
- Stir yeast into water.
- Mix butter, milk, sugar, and salt.
- Add egg yolks, yeast mixture and 2 cup flour.
- Mix thoroughly.
- Add remaining flour and turn dough out on a floured surface.
- Knead until smooth, elastic and does not stick to surface.
- Place in greased bowl and let rise 1 hour.
- Grease your baking pan.
- Filling: mix milk, salt, margarine and sugar.
- Heat slightly until margarine melts and sugar is dissolved.
- Add nuts then to stretch mixture you can fold in beaten egg whites.
- After it has risen, divide into 4 equal parts.
- Do not knead.
- Roll each piece to about 1/8 inch thick.
- Spread with cooled filling.
- Roll jelly-roll style and place seam down in a greased pan.
- Let rise for 1 hour.
- Preheat oven to 350°F.
- Bake 40 - 45 minutes.
GRANDMA'S POVITISA (PO-VUH-TEET-ZUH) POVITICA CROATIAN NUT BREAD
I loved when my grandma would make this recipe as a child. A real Croatian treat. Enjoy! This is time consuming, but worth every minute!

Steps:
- Combine warm water and yeast together in a large bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Stir 3/4 cup lukewarm milk, white sugar, shortening, 1 egg, and salt into yeast mixture. Mix flour into yeast mixture until a soft, easy to handle dough forms.
- Turn dough out onto a lightly floured surface and let stand for 10 minutes. Knead dough until smooth and elastic, about 8 minutes. Form dough into a ball.
- Place dough in a large, lightly-oiled bowl and turn to coat. Cover bowl with a damp towel and let rise in a warm place until doubled in volume, or until a hole remains when your finger is pressed deeply into the dough, about 2 hours.
- Punch down dough and turn onto a lightly floured surface. Shape into ball and let dough rest for 15 minutes.
- Beat brown sugar, butter, and 1 egg together in a bowl until creamy. Add 1/4 cup milk, vanilla extract, and lemon extract; stir until smooth. Stir walnuts into the filling mixture until walnuts are completely incorporated.
- Roll dough on a large, floured cloth into a 20x30-inch rectangle. Spread walnut filling evenly over the top of the dough, spreading to the edges. Roll the rectangle up along the long edge like a jelly roll and pinch edges to seal. Coil the roll into a snail-shape.
- Grease a 9x13x2-inch baking sheet. Place shaped dough on the prepared sheet and let rise until an impression remains when the dough is gently pressed, about 1 hour.
- Preheat oven to 325 degrees F (165 degrees C).
- Bake in the preheated oven until the top is golden brown, 40 to 45 minutes.

POTICA
This is a wonderful bread from Slovenia with a sweet, nutty filling. Due to the spelling and pronunciation (paw-tee'-tzah) it's very hard to find the recipe.

- In a small mixing bowl, dissolve yeast, 1 teaspoon sugar, and 3 tablespoons of the flour in warm milk. Mix well, and let stand until creamy, about 10 minutes.
- In a large mixing bowl cream the butter with the remaining sugar. Add the egg yolks one at a time, beating well after each addition. Add the yeast mixture, remaining milk, 4 cups of flour and the salt; mix well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Lightly grease one or two cookie sheets. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and roll Out to 1/4 to 1/2 inch thickness. Spread each piece with melted butter, honey, raisins, walnuts and cinnamon. Roll each piece up like a jelly roll and pinch the ends. Place seam side down onto the prepared baking sheets. Let rise until double in volume. Preheat oven to 350 degrees F (175 degrees C).
- Bake at 350 degrees F (175 degrees C) for about 60 minutes or until the top is golden brown.

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, salt, egg, shortening, and 1-1/2 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down. Turn onto a lightly floured surface; roll into a 30x20-in. rectangle. In a bowl , combine the butter, brown sugar, eggs, vanilla, lemon extract if desired and nuts. Stir in enough milk to achieve spreading consistency. Spread over rectangle to within 1 in. of edges., Roll up jelly-roll style, starting with a long side; pinch seams and ends to seal. Place on a greased baking sheet; shape into a tight spiral. Cover and let rise until nearly doubled, about 1 hour., Bake at 350° until golden brown, about 35 minutes. Remove from pan to a wire rack to cool. If desired, combine confectioners' sugar and enough milk to make a thin glaze; brush over roll.

HOLIDAY NUT ROLL (AMERICANIZED CROATIAN NUT ROLL)
While similar to other nut roll recipes, this filling is unique because it uses no egg whites or lemon and includes a delicious "Americanization" of the Slavic recipe by adding--whiskey! It adds a fantastic additional flavor; feel free to split the filling before adding whiskey if you'd like to reserve some spirit-free for the kids (though it cooks off and I've never met a kid who didn't like this). Makes a big batch--perfect for giving away. Freezes very well. My sister and I will make double this batch all at once and freeze them until we're ready to give/send them out.

- Scald milk in small pan, set off burner and cool to warm. In large mixing bowl combine warm milk and yeast with wire whisk. Beat eggs in separate bowl, then add to milk. Beat milk-egg mixture by hand for 2 minutes. Mix in sugar and margarine. Add flour slowly, mixing as you go (my grandmother insists this should be done with a wood spoon). Do not rise, do not chill. Set aside.
- Chop walnuts (food processor or very finely by hand). In large mixing bowl, combine walnuts, white sugar, and milk. Mix thoroughly. Add remaining ingredients (butter, brown sugar, salt, vanilla, whiskey), mixing thoroughly. Filling should be thick and moist, but not stiff.
- Pre-heat oven to 325 degrees.
- Separate large dough ball completely into 10-12 equal balls (simple method is to cut dough to equal portions on a cutting board with a lightly floured butcher knife then reform portions to balls).
- On a rolling board or clean counter, roll each dough ball to about 1/4 inch thickness in an oblong-oval shape. Spread nut mixture over rolled dough, covering the entirety with a thin layer, and keeping the mixture about 1/2 inch to 1 inch away from the edges of the dough.
- Form the roll first by folding the horizontal edges of the dough inwards on both the left and right sides. Then fold up the bottom of the dough about 1 1/2 inches. Each side and the bottom of the dough should now be folded in towards the middle of the rolled dough so that the nut covering is enclosed by the folded sides. Begin rolling from the bottom of the dough (where you just made the fold) towards the top. When you reach the top, fold the edges into a wide triangular flap (so that the roll will end with an overlapping wide "V"). Place the roll "V" down on a greased cookie sheet. This sounds complicated, but the basic idea is simply to close off the edges to prevent leaking--if you simply roll it like a jelly roll, the filling would ooze out and burn on the pan.
- Brush top with beaten egg (makes the roll pale gold-brown when baked).
- Repeat process to form other rolls. If nut mixture becomes thick and difficult to spread add more evaporated milk.
- Keep rolls at least 2 inches apart on baking sheets, and bake each for 20-25 minutes or until tops appear golden-brown. Cool at least 20 minutes before moving.

this jelly roll style coffee cake with its walnut cinnamon filling is a Yogoslavian favorite found in Minnesota bakeries...the rich yellow yeast dough is made with milk, egg, and sugar..it requires three risings, so plan accordingly..it is an exceptional coffee cake..

- in a small bowl, sprinkle the yeast over the warm sugared water --.
- in a small pan, scald the milk and add the granulated sugar and 1/4 cup of the butter.
- When cool, add the beaten egg, egg yolks and salt to the milk.
- Meanwhile, plae 4 1/4 cup flour and the remaining 1/2 cup of the butter into a large food processor bowl or a large mixing bowl.
- process for 15 seconds or until well combined.
- then add the milk and egg mixture plus the yeast mixture.
- process until the mixture forms a ball.
- if the dough is too sticky to form a ball.keep the processor on and add flour.1 tbls at a time until it comes together.
- continue processing untl the ball rotates around the bowl 25 times.
- if doing hand mixing or using the dough hook attachment on your mixer, mix to knead until a smooth dough is formed.
- if flour needs to be added "less is more" dough that is slightly sticky is better than dry dough.
- let the dough rest 5 minutes, then turn it onto a floured surface and knead a few times.
- Place the dough in a lightly greased large bowl.turn once and cover lightly with plastic wrap.
- let rise in a warm spot (approximately 80* until doubled, about 1 hour.
- punch down thoroughly, oil the top and let rise again, until doubled, about 1 more hour.
- Meanwhile, make the filling.
- process the nuts in a food processor until fine (or chop in a blender) transfer to a medium bowl.
- in a small saucepan, heat the cream to almost a boil.
- add the hot cream to the nuts, along with the butter, brown sugar, lemon rind, egg and cinnamon.
- process to blend well.
- After the dough has risen the second time, punch down and divide in half.
- transfer to a floured surface and roll out each piece of dough into a rectangle, about 14 x 24" and 1/8" thick.
- roll as thin as possible for a really fine poticia.
- spread one rectangle with half the walnut filling, spreading it to within 1" of the edges.
- starting at the long side of the rectangle, roll up the poticia firmly, jelly roll fashion --.
- repeat with remaining dough and filling.
- transfer the rolls to a large greased baking sheet.
- shape each into a coil or U shape, seam sides down.
- the U shape is used for economy of space.a snail-like coil makes a more attractive gift.
- let the poticia rise again until doubled.about 45 minutes.
- preheat the oven to 350*.
- brush the tops of the poticia with the beaten egg and bake for 30-40 minutes or until lightly browned.
- remove to a wire rack to cool.
- just before serving, sprinkle with confectioners' sugar.
- if freezing, add confectioners' sugar after thawing completely.

- Place walnuts in a food processor. Process until roughly ground.
- Melt 3/4 cup butter in a skillet over medium heat. Stir in 1/2 cup sugar until dissolved, about 1 minute. Remove from heat. Add ground walnuts and maple flavoring; stir to combine.
- Mix 2 cups flour, yeast, 3 tablespoons sugar, and salt together in a bowl.
