BIRTHDAY CAKE WAFFLES

- Preheat oven to 300°. Combine the first 5 ingredients and, if desired, rainbow sprinkles. In another bowl, whisk eggs, milk, yogurt and extracts. Add yogurt mixture to flour mixture; mix until smooth., Preheat waffle maker coated with cooking spray. Bake waffles according to manufacturer's directions until golden brown. Transfer cooked waffles to oven until ready to serve., For frosting, beat cream cheese and butter on high until light and fluffy, 2-3 minutes. Gradually beat in confectioners' sugar, 1/2 cup at a time, until smooth. Beat in vanilla. Add enough milk to reach desired consistency. Spread over warm waffles. For a cakelike look, cut waffles into fourths and stack them; decorate with birthday candles.

- Heat waffle maker. (Waffle makers without nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray.)
- Make cake batter as directed on box, using water, oil and eggs.
- For each waffle, pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake 3 to 5 minutes or until steaming stops. Carefully remove waffle.
- Serve waffles warm or cold with toppings of your choice.

POUND CAKE WAFFLES
I found this recipe in the booklet that came with my waffle maker. They are light soft and delicious...NO need for syrup.

Steps:
- In mixing bowl, beat sugar and butter until light and fluffy, stopping to scrap bowl occasionally. Beat in eggs, 1 at a time until blended. Add zest and juice. In small bowl, whisk together flour, salt, baking powder and baking soda to blend well. On low speed, add flour mixture, in three parts, alternately with buttermilk, in two parts. Mix just until blended, stopping to scrap bowl often. Batter will be very thick. Spoon batter onto hot, greased waffler and bake.

Steps:
- Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
- Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.
