NANNY'S NEWFOUNDLAND TEA BISCUITS

My nanny used to make these tea biscuits all the time. One of my favorite memories of visiting Newfoundland is standing at the kitchen table as she made these and gave us a little bit of the raw dough to taste. They're light and delicious! Serve hot with butter and jam.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Whisk flour and baking powder together in a bowl; stir in raisins. Whisk milk and eggs together in a bowl.
  • Beat butter, sugar, and salt together in a bowl with an electric mixer until light and fluffy, about 1 minute. Beat egg mixture into butter mixture; stir in flour mixture until dough is just mixed.
  • Turn dough out onto a lightly floured surface and pat or roll out about 1-inch thick. Cut dough with a biscuit cutter or juice glass; place biscuits onto the prepared baking sheets.
  • Bake in the preheated oven until golden brown, about 10 minutes.

Steps:

  • 1. For the Biscuits:Heat oven to 450 deg.Cut butter & margarine into combined dry ingredients until mixture resembles fine crumbs,Stir in milk until dough leaves side of bowl.Knead lightly 10 times.Pat out to 1/2 inch thick rectangle.Cut into squares.Place on ungreased cookie sheet,bake 10-12 mins. For the Pan-Fried-Steaks: Season steaks with salt,pepper.Cut garlic in half and rub all over steak,rub with a small amount of oil. Heat skillet to high. Brown steaks on both sides,turn heat to medium high and cook until medium well or how ever you like. Place on a serving plate;cover with foil;let rest a few minutes. For the Potatoes: Cook potatoes in microwave or steam just until tender. Dry well.Heat skillet,add oil,add potatoes,season with salt and pepper,cook until golden brown. For the Mushrooms:Melt butter,add onions and mushrooms. Stir fry until mushrooms are tender,add garlic last few minutes to prevent burning,season with salt and pepper. For the Scrambled Eggs: beat eggs well,season with salt,pepper and hot sauce.Melt butter,add eggs and cook and stir slowly until soft and fluffy.Serve right away.

This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Sift flour, sugar, baking powder, cream of tartar, and salt into a bowl. Use a pastry cutter to chop vegetable shortening into the flour mixture until it resembles coarse crumbs. Whisk egg and milk together in a separate bowl and slowly add milk mixture to flour mixture, stirring as you pour, until dough is moistened and well-mixed. Drop dough by spoonfuls onto an ungreased baking sheet.
  • Bake in the preheated oven until biscuits have risen and are golden brown, 10 to 12 minutes.

Steps:

  • Heat the oven to 450°F. In a medium bowl, stir the flour, sugar, baking powder and salt until mixed. Cut in the shortening using a pastry blender or fork, until mixture looks like fine crumbs. Stir in the milk until mixture forms a soft dough and leaves the side of the bowl (dough will be soft and sticky).
  • Lightly sprinkle flour over a cutting board or countertop. Place dough on floured surface; gently roll in the flour to coat. To knead dough, fold dough toward you. With the heels of your hands, lightly push dough away from you with a short rocking motion. Move dough a quarter turn and repeat 10 times. Dough will feel springy and smooth.
  • On the floured surface, flatten dough evenly, using hands or a rolling pin, until dough is 1/2 inch thick.
  • Before cutting each biscuit, dip a 2 1/2-inch round cutter into flour to lightly coat it so it will cut cleanly through the dough without sticking. To cut, push the cutter straight down through the dough without twisting or turning. Cut the biscuits as close together as possible. On an ungreased cookie sheet, place biscuits about 1 inch apart for biscuits with crusty sides, or place with sides touching for biscuits with soft sides.
  • Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.
