Princess Chicken Recipes

Steps:

• Chop chicken into 1 inch pieces.
• Combine 2 tablespoons cornstarch and 1 tablespoon soy sauce in medium bowl; add chicken, stir and let sit for 30 minutes.
• Combine sake, soy sauce, sugar, salt, cornstarch and sesame oil; set aside.
• Heat oil in wok.
• Stir fry chicken 2 minutes until lightly browned.
• Remove all but 2 teaspoons oil from wok.
• Stir fry dried pepper and peppercorns briefly.
• Add minced ginger and cooked chicken stir fry 1 minute.
• Add seasoning sauce; stir until sauce thickens.
• Stir in peanuts.
• Serve over hot rice.

Steps:

• Coat chicken fillets lightly with seasoned flour.
• Heat oil and butter in a skillet.
• Cook chicken until golden on both sides.
• Remove chicken from pan and keep warm.
• Add remaining ingrediets to pan and simmer for 3 minutes.
• Return chicken to sauce in skillet and heat gently for 3/5 minutes.
• Adjust seasonings and serve.
• Steamed new potatoes and carrots go well.

Steps:

• In a heavy duty plastic bag pound chicken breast to 1/4 inch.
• Combine flour, paprika, and pepper.
• Coat chicken with flour mixture, shaking off excess.
• In large nonstick skillet, coated with cooking spray saute' chicken til browned and juices run clear.
• Remove and keep warm.
• In skillet, brown canadian bacon,turning once, remove, keep warm.
• Wipe skillet clean with paper towel.
• Combine sour cream, mayonnaise, lemon juice, mustard in skillet cook stirring constantly over med-low heat til sauce is heated through (do not boil).
• Place English muffin on baking sheet, top each half with slice of canadian bacon, chicken breast, 1 slice tomato and 2 tablespoons sauce.
• Broil til bubbly, serve.
