COMPANY CABBAGE
Another down home recipe, this one came from my mother. Cooking times are approximate, each oven is different. Personally, I use 4 or 5 tablespoons of the chili sauce and 3 or 4 shakes of Tobasco sauce. Of course I always add extra cheese! This easy recipe lends itself to being adjusted to suit your tastes. Steps:
- Cook cabbage in enough water to cover until tender, about 20 minutes.
- Saute onion and bell pepper in margarine.
- Gently place drained cooked cabbage in 13 x 9 casserole.
- Make white sauce using 3 T flour and 2 C milk, add sauted onion and pepper to sauce.
- Spoon white sauce mixture over cabbage and brown in 350 F oven, about 20 minute.
- In small pan mix shredded cheese, 3 T chili sauce, dash of Tobasco sauce and 1/2 C mayonaise, heat on medium until cheese melts. Spoon over cabbage and brown again. About 10 minutes.

COMPANY CABBAGE II
Cabbage is a challenge for me, I love it but like to find new ways to fix it. This recipe was in an old cookbook that I have had for years but I just tried this recipe last night. I did not find anything like it on Food.com, so I am sharing it.

Steps:
- put cabbage, carrots, onion, salt and pepper in saute pan.
- Pour hot chicken broth over the veggies, add more water as needed.
- Cover and bring to boil, then reduce heat to simmer.
- Simmer until veggies are tender ( I cook mine about 45 minutes, but it depends on how done you like your cabbage).
- Melt butter in small pan. Stir in pecans and mustard.
- Toss to coat.
- Transfer veggies to serving dish, top with butter and pecan mix, then sprinkle with paprika. Enjoy.

Tip: To toast almonds and sesame seeds, spread them in a single layer in separate ungreased shallow pans. - Put first 7 ingredients into large bowl. Toss.
- Asian Dressing: Empty seasoning packet into jar with tight-fitting lid. Add next 6 ingredients. Shake well. Makes about 3/4 cup dressing. Drizzle over salad. Toss well.
- Just before serving, break up instant noodles. Scatter over top. Sprinkle with chow mein noodles.

Steps:
- Put 1/2 of the shredded cabbage in greased casserole dish.
- brown hamburger and onion, pour off grease.
- Add rice,soup,water, and seasonings to hamburger mixture.
- Put 1/2 mixture on top of cabbage in casserole dish.
- Repeat with remaining cabbage and beef mixture.
- Bake for 30 minutes at 350 degrees, top with cheese and bake for another 25-30 minutes.
CABBAGE BREDIE (STEW)
In the Cape Maly Cookbook by Faldelah Williams she says that Bredies is an old Cape name for a dish of meat and vegetables stewed together so that the flavours intermingle and it is impossible to separate the one from the other. The unique flavour of the bredie is determined by the vegetable used. Although almost any vegetable can be used the meat is almost always lamb or mutton. Mutton is ideal for bredies as the long slow simmering tenderizes it and brings out the full flavour. Recipes for bredies have been handed down through many generations and they changed very little in character over the years. The flavour is delicious that there is no need for additional herbs and spices.

- NOTE: IF USING CABBAGE OMIT WATER OR USE SPARINGLY SO POT DOES NOT BURN AS CABBAGE DRAWS A LOT OF WATER.
- Heat oil in heavy casserole or soup pot. Add cloves, peppercorns, and allspice. Once it starts sizzling add onions. Brown your onions nicely (my mom always said that if you brown the onions to a nice golden colour you will have a better tasting and looking bredie; not browning the onions nicely will give you a grey colour bredie which we don't want).
- Add meat and simmer slowly till meat is done and well browned.
- Add salt, chillies, ginger and garlic paste and sugar and half cup water. Bring to a boil and simmer for about 10 minutes until flavours are well blended.
- Add your cabbage/ cauliflower and potatoes and cook until vegetables are soft about 20 minutes. Use the remaining water only if you find that it is necessary, (the pot is becoming dry).
- Sprinkle with nutmeg before serving.
- Serve with white rice and sambals and atjar. Cucumber and onion sambal goes well with this dish.
- Peel cucumber grate it then put 5ml salt and let it sit for 10-15 minutes. Squeeze moisture out. Add some slice onion, 1 green chilie chopped, 5ml sugar and 30 ml vinegar. Good with hot curries.
