PRIZE WINNING MARINADE FOR BEEF
I combined my sister-in-law's marinade recipe with my friend's barbecue cooking method. I then submitted this recipe into to a radio station as part of a contest and I ended up winning the grand prize of a Jenairre stove! It's so versatile that it works both with cheap cuts of beef and expensive too. I won't cook beef roast any other way. Enjoy!

Steps:
- Using a food processor, crush peppercorns until fine.
- Add garlic to processor and crush.
- Add soy sauce, Worcestershire sauce and lemon juice and blend.
- Pour mixture into giant zip lock freezer bag and add the meat to be marinated (even the cheapest cuts of beef will taste like prime rib!).
- Seal bag.
- Refrigerate for 48 hours (turn bag every time you open the fridge door).
- Reserve the marinade for later use.
- Barbecue the meat as you would normally however, I prefer to cook the meat very VERY slowly using an indirect cooking method--only ONE side of the barbecue is lit and turned down to low.
- The meat is placed on the one side of the barbecue which is off, over a pan of water, which sits on the barbecue rocks.
- Note: Total barbecue time depends on the size of beef roast.
- Relax while your dinner cooks.
- Put marinade on the stove and bring to a boil.
- Add just enough marinade to some sour cream, to make a sauce to drizzle over the cooked meat.
- Sit back and enjoy the compliments.
GOAN BEEF ROAST

- Put all the ingredients mentioned under"Marinade" together in a bowl and mix well.
- Add beef and mix well to coat with everything.
- Marinate for 10-12 hours in the refrigerator.
- Heat oil in a pan.
- Toss in the red chillies,allow to splutter and then add the chopped onion.
- Stir-fry until golden brown.
- Add the marinated beef pcs.
- to it.
- Cover and allow to cook till the water reduces to half.
- Cut the beef into thin slices when it is hot.
- Add it again to the vessel and cook on low flame until all the water dries up.
- Serve with chilli fried potatoes.
- You can use this recipe to prepare the stuffing for sandwiches.
- Use these slices of roast, lettuce, cucumber and tomato as per your taste and make great sandwiches.

- In a shallow dish, combine the first 6 ingredients; add steak and turn to coat. Cover; refrigerate for 4 hours or overnight., Drain and discard marinade. THE BEST EVER BEEF TENDERLOIN (FILET OF BEEF)
My lovely step-mother, Jan, is one of the best cooks I know! This Beef Tenderloin is one of her specialty recipes, and it is absolutely mouth-watering delicious! I love it because it is quite fast and easy to cook (after the marinating time), yet, it is perfect for special occasion meals, because it tastes like you slaved over it. Please note that the prep/cooking time does not include the over-night marinating. Please also note that the marinade will come out as a paste (after cooking it)--this is normal (thickened by the cornstarch), and is meant to be place on the top of the meat, as it cooks like a wonderful crust!

Steps:
- Combine all marinade ingredients in heavy saucepan; mMix well.
- Bring just to boiling point.
- Remove from heat, and allow to cool.
- Place beef in a glass, enamel, or stainless steel pan.
- Pour cooled marinade over beef, and cover.
- Allow to marinate overnight in fridge.
- Remove from fridge several hours before roasting.
- Preheat oven to 450°F.
- Place meat in shallow baking pan, and pour marinade over it.
- Roast for 20 minutes, basting with marinade from time to time.
- Reduce heat to 350°F.
- Continue roasting another 20 minutes (or until beef reaches desired doneness).
- Remove from oven and let cool in marinade.
- Cut into thin slices and serve at room temperature.
- NOTE: This is best served rare to med-rare. It is most often done after 40 minutes of roasting, so please be careful not to overcook.
FANTASTIC GRILLED BEEF KABOBS!
My family *loves* these kabobs, plan ahead the beef needs to marinate 8 hours or overnight is even better, if you are using wooden skewers make certain to soak them in cold water for a minimum of 30 minutes before using them for grilling or they will burn, this recipe serves 3-4 people (two skewers each) but I would suggest to double the recipe if you are serving more than 4 people --- cooking time is only estimated and prep time includes marinating time. The French dressing can be replaced with Russian dressing if desired, you will love these! :)

- In a bowl, combine salad dressing, Worcestershire sauce, lemon juice, pepper and fresh minced garlic or garlic powder (if using) mix well to combine; reserve about 1/4 cup and refrigerate.
- Using a shallow glass dish place in the beef cubes, and pour the remaining marinade over the beef; toss to coat.
- Cover and refrigerate for 8 hours or overnight is even better.
- After 8 hours, remove the beef, and discard the marinade.
- Wrap the bacon slices around the beef cubes.
- Then thread the beef alternately with the coarsely chopped veggies (make certain to thread the skewers through the wrapped bacon side, or the bacon will come open when grilled).
- Grill over hot heat for about 10-15 minutes, basting frequently with reserved marinade, or until beef reaches desired tenderness.
