- Heat a panini grill or waffle iron. Brush oil over bread slices. Turn 4 slices over; spread pesto evenly over bread. Top with half of the cheese, tearing to fit if necessary, all of the prosciutto and pepper strips and remaining cheese. Close sandwiches with remaining bread oiled sides up.
- Cook (in batches) in panini maker* or waffle iron 3 to 4 minutes or until golden brown and cheese is melted.

- Smear 4 tablespoons butter over the bottom half of each baguette. Drizzle with oil. Divide prosciutto evenly between the baguettes. Place the top halves over the prosciutto. Cut each baguette crosswise into 4 pieces. Serve immediately.

PROSCIUTTO, CANTALOUPE AND BUTTER SANDWICH WITH BASIL DRIZZLE

- For the basil drizzle: Combine the basil, parsley, salt, red pepper flakes, garlic, lemon juice and chile in a mini food processor and pulse to make a chunky paste. Add the olive oil and process until smooth and bright green.
- For the prosciutto, cantaloupe and butter sandwich: Spread the butter on both cut sides of the baguette. Drizzle the bottom piece with a tablespoon or so of the basil drizzle. Layer the prosciutto and cantaloupe on the bottom piece of the baguette, ruffling and folding the prosciutto as you go. Drizzle a tablespoon of the basil drizzle over the top. Drizzle the cut side of the top piece with 1/4 cup or so of the basil drizzle. Place the top piece of baguette on the prosciutto and cantaloupe and cut into 2 sandwiches using a serrated knife. Serve the extra basil drizzle on the side or reserve for another use.
SMOKED GOUDA AND PROSCIUTTO PANINI SANDWICH

- Brush both sides of the slices of bread with olive oil or butter. Assemble the sandwich layers as follows: prepared bread, smoked gouda, prosciutto, onions, tomato, fontina, and bread. BRIE AND PROSCIUTTO SANDWICH
I created this! I toasted rye bread and had it as an "open face" sandwich but this could also work on crackers as an appetizer. Note: the brie tastes best when left out at room temperature.

- Assemble the sandwich by smearing the honey mustard on the toast.
- Place the brie on top of the honey mustard then the prosciutto on top of the cheese.
- If you like, you can put another toasted slice of rye bread on top to close the sandwich but I prefer to eat mine open faced.

GRILLED BACON AND PROSCIUTTO SANDWICH
A flavorful twist on a classic dish; the Grilled Cheese. I use Cabot Extra Sharp Cheddar Cheese, though feel free to experiment with your favorite cheeses. Because of the richness of the Bacon and Prosciutto, I don't feel the need for as much cheese as I typically would on a sandwich. The bread can vary also, I enjoy some sort of Italian style, such as a Tuscan Loaf. The better the bread, the better the sandwich! This is a fairly foolproof recipe, as long as you don't burn anything during cooking, you should feel free to adjust the ingredients to taste. These are just my personal preferences for level of spice and flavor.

- The Bacon and Prosciutto needs to be grilled, so start your grill to a Medium-High Heat.
- Take your garlic and rub it over the bread, trying to squeeze the juice onto it. Spread the butter on both pieces of bread.
- Mince the Garlic and Parsley, and spread just a tad of the finely minced garlic onto the buttered side of the bread. Leave some to use later.
- Take your cheese and place it on a non-buttered side of bread. Take your remaining garlic and parsley and season to taste.
- Place a frying pan on the stove and turn it to Medium Heat.
- When your grill is hot, start by placing the bacon over the flames. I do about a 1.5 minutes on one side then maybe a minute on the other. Just grill it to the crispyness you prefer. When you bacon is nearly done, place your prosciutto over the flames. This does not need to be for long! It is just to crisp the Prosciutto slightly.
- When done place the Bacon and Prosciutto on the cheese. Place your other slice of bread over it and set in frying pan to cook. (Buttered sides of bread should be out) Cover pan for 2 minutes. Flip with Spatula, side should be slightly crispy and brown. Cook on remaining side for another 1.5-2 minutes covered.
- Remove and enjoy!

- Make sandwiches:
- With a serrated knife halve rolls horizontally or cut loaf diagonally into 4 pieces, halving each piece horizontally.
- Spread cut sides of bread with confit and make 4 sandwiches with prosciutto and Brie.
- Make rosemary fig confit:
- In a 1 1/2-quart heavy saucepan stir together ingredients and simmer, covered, 20 minutes. Remove lid and simmer mixture, stirring occasionally, until most liquid is evaporated and mixture is thickened. In a food processor coarsely purée fig mixture. Confit may be made 5 days ahead and chilled, covered.
- Bring confit to room temperature before using. Makes about 1 1/4 cups.

- Combine first 5 ingredients in mortar; mash with pestle to paste. Add 1 cup olives and mash to coarse paste. Chop remaining 1/4 cup olives and stir into mixture.
