Steps:

  • Preheat the oven to 400° F. Butter a 6-cup soufflé dish or an 8-cup gratin dish and coat it with the Parmesan. Heat the milk with the aromatics until it boils. Set it aside to steep for 15 minutes, then strain.
  • Melt the butter in a saucepan. When foamy, stir in the flour and cook over low heat for several minutes. Whisk in the milk all at once and stir vigorously for a minute or so as it thickens, then add 3/4 teaspoon salt, a few twists of pepper, and the cayenne. Remove from heat. Beat in the egg yolks one at a time until well blended, then stir in the cheese. Don't worry about getting it smooth.
  • Beat the egg whites with a pinch of salt until they form firm peaks, then stir a quarter of them into the base to lighten the mixture. Fold in the rest, transfer to the prepared dish, then put in the center of the oven and lower the heat to 375° F. Bake for 30 minutes or until golden and just a bit wobbly in the center. Remove, scatter the thyme over the top, and serve immediately.

Butter, plus 2 tablespoons freshly grated Parmesan, for the dish
1 1/4 cups milk or cream
Aromatics: 1 bay leaf, several thyme sprigs, 2 thin onion slices
3 tablespoons butter
3 tablespoons flour
Salt and freshly milled pepper
Pinch cayenne
4 egg yolks
1 cup (about 4 ounces) crumbled goat cheese, preferably a Bucheron or other strong-flavored cheese
6 egg whites
Several plump thyme sprigs, leaves only

VEGETABLE, HERB AND CHEESE SOUFFLE

Fines herbes is a classic combination of delicate and subtle herbs commonly used in French cooking. We love this herby combo paired with a super light and airy cheese souffle. Use just chives if you can't locate all the herbs-their flavor is incredible. And if you have it on hand, add in a little freshly grated nutmeg with the cheese and whole eggs.

Steps:

  • Position a rack in the middle of the oven and preheat to 375 degrees F. Butter the bottom and sides of four 6- or 8-ounce ramekins.
  • Melt the butter in a medium saucepan over medium heat. Add the flour and salt and cook, stirring, about 1 minute. Add 3/4 cup water, bring to a simmer and cook, whisking constantly, until the mixture is as thick as pudding, about 3 minutes. Remove from the heat and stir in the cheese, fines herbes and whole eggs. Transfer to a medium bowl and stir until slightly cool.
  • Beat the egg white in another medium bowl until soft peaks form, about 2 minutes. Gently fold the whites into the cheese mixture until there are only a few streaks.
  • Put the prepared ramekins on a baking dish, divide the batter evenly among them and smooth the tops with a spoon. Bake until golden and puffed about 1 inch above the lips of the ramekins, 15 to 20 minutes. Serve and enjoy right away.

3 tablespoons unsalted butter, plus more for buttering ramekins
1/4 cup all-purpose flour
1 teaspoon kosher salt
1 1/2 cups shredded fontina
1/2 cup chopped fresh fines herbes (a mixture of parsley, chives, chervil and tarragon) or chopped chives
1/2 cup chopped fresh fines herbes (a mixture of parsley, chives, chervil and tarragon) or chopped chives
2 large eggs plus 1 large egg white

Bring to a boil, stirring until the butter melts. Add the flour and stir over medium heat for 1 minute. Cool for 5 minutes. Crack the eggs into a measuring cup. Use a wooden spoon to beat the eggs into the dough, 1 at a time. Stir in the Parmesan and pepper. Spoon 18 mounds of dough onto the prepared baking sheet, spacing 2 inches apart. Bake until the profiteroles are puffed and golden, about 45 minutes. Allow the profiteroles to cool completely.;

Steps:

  • Preheat oven to 350°F. Rub inside of six 3/4-cup soufflé dishes or ramekins with 2 tablespoons butter. Coat with breadcrumbs; tap out excess. Set aside.
  • Melt remaining 2 tablespoons butter in heavy large saucepan over medium-low heat. Add flour and cook 2 minutes, whisking constantly. Gradually whisk in milk. Increase heat to medium. Simmer mixture until very thick, stirring constantly, about 5 minutes. Add half of goat cheese and whisk until melted and smooth. Mix in salt and pepper. Whisk egg yolks in medium bowl to blend. Gradually whisk in hot soufflé base. Cool 5 minutes.
  • Beat whites in large bowl until stiff but not dry. Mix 1/4 of whites into soufflé base to lighten. Fold in remaining whites. Fold in remaining goat cheese. Divide mixture among prepared soufflé dishes. Place in 13x9x2-inch metal baking pan. Add enough hot water to pan to come halfway up sides of dishes.
  • Bake soufflés until puffed and golden brown on top and softly set in center, about 20 minutes. Serve soufflés immediately in their dishes. Or for twice-baked version, cool soufflés in dishes in water for 5 minutes. Remove soufflés from water. Run small sharp knife around sides of dishes to loosen soufflés. Turn out onto buttered baking sheet. Refrigerate up to 4 hours. Before serving, rewarm soufflés on same sheet in 350°F oven until heated through, about 10 minutes.

4 tablespoons (1/2 stick) butter, room temperature
3/4 cup (about) dry white breadcrumbs
2 tablespoons all purpose flour
2/3 cup whole milk
5 ounces soft fresh goat cheese (such as Montrachet), very coarsely crumbled
1/2 teaspoon salt
1/4 teaspoon pepper
2 large egg yolks
4 large egg whites

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter four 200ml ramekins or ovenproof dishes, or six 150ml ones. Set the dishes on a baking tray to make them easier to remove from the oven. Melt the butter in a heavy-based pan, stir in the flour and cook, stirring, for 1 min. Slowly mix in the milk to make a thick sauce. Simmer for 2 mins to cook the flour. Remove from the heat and stir in the parsley, spring onions, goat's cheese, egg yolks, threequarters of the parmesan and seasoning.
  • Whisk the egg whites until they are stiff, then fold into the sauce in three batches, cutting through the mixture each time to incorporate the egg white without losing too much air from the mix. Divide between the prepared dishes and sprinkle with the remaining parmesan. Bake for 20 mins for the small dishes and 25 mins for the larger ones until risen and golden. Serve without delay.

SOUFFLé CASSEROLE OF CHARD, GOAT CHEESE, AND FRESH HERBS

Often people are intimidated by the thought of making a soufflé, but soufflés are actually quite easy to make and are delicious. This simple version has seasonal herbs and greens and is baked as a casserole in a shallow dish. It doesn't have to be served before it deflates, because the amount of pouf is less important in this presentation. This casserole is wonderful for brunch or a light lunch served with some lightly dressed tender salad greens. If you want a traditional presentation, this same recipe can be made in an 8-cup soufflé dish.

Yield serves 8 as a side dish

Steps:

  • Prepare a medium heat fire (375°F) in a wood-fired oven or cooker.
  • Butter an 8-cup gratin dish and dust with the Parmesan. Cut out the chard stems, dice them, and set aside. Chop the chard leaves; you should have about 2 cups.
  • Heat the olive oil in a cast-iron skillet over medium heat and sauté the diced chard stems and shallots until soft, 5 to 7 minutes. Add the chard leaves, arugula, herbs, and salt and pepper to taste. Sauté to wilt the greens, about 5 minutes. Remove from the heat and set aside.
  • To make the béchamel sauce, combine the milk, bay leaf, and shallot in a saucepan over medium heat. Bring to a low boil, then remove from the heat and let steep for 15 minutes. Discard the bay leaf and shallots. Set aside.
  • Melt the butter in a saucepan over medium heat. Add the green onions and sauté for 1 minute. Add the flour and stir for 3 minutes. Stir in the Dijon mustard. Gradually stir in the steeped milk until the sauce is thickened. Season with salt and pepper. Remove from the heat and set aside.
  • Stir the egg yolks into the béchamel sauce. Add the wilted greens and salt and pepper to taste. Add 3/4 cup of the goat cheese. In a large bowl, beat the egg whites until stiff, glossy peaks form. Fold half of the egg whites into the béchamel mixture, then the remaining half. Spoon the soufflé mixture into the prepared dish.
  • Top with the remaining goat cheese and the parsley. Place in the oven on a grate and bake for 25 to 30 minutes, until firm to the touch and golden. Serve hot.

2 cups grated Parmesan cheese
1 small bunch chard leaves
2 tablespoons olive oil
1/4 cup sliced shallots
1 cup chopped arugula leaves
1 tablespoon fresh marjoram leaves
1 tablespoon fresh mint leaves, torn into small pieces
Kosher salt and finely ground white pepper
1 1/2 cups low-fat milk
1 large bay leaf
1 shallot, sliced
3 tablespoons unsalted butter
3 green onions (white part only), thinly sliced
3 tablespoons all-purpose flour
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground white pepper
4 large egg yolks, beaten
1 cup crumbled fresh goat cheese
6 large egg whites
1/4 cup minced fresh flat-leaf parsley
