We love using this delicious blend to season chicken or vegetables before grilling. Makes enough to store and use later. Sprinkle over meat or vegetables and grill.

FOOL'S SALT - SEL FOU - FRENCH STYLE SEASONING SALT
Every self-respecting French housewife has a tub of this by the side of her cooker; they are all slightly different depending on the region you live in, but this is one that I use over and over again. It has just a hint of herbs & spices, enhancing a dish rather than overpowering it. The French call this "Sel Fou" or Fool's Salt, which is a wonderful name for it I think! Please note, I have NOT added any chilli powder or Cayenne pepper in this mix - I realise that hot spices are popular in seasoning salts, but this is herbal rather than spiced! I use it to sprinkle over salads, add it to pasta, stews, soups, daubes, casseroles, pies, roast chicken & meat etc. It is also GREAT sprinkled onto hot Chips (French fries) & over the top of pizzas. I don't like to make huge quantities, due to the herbs losing their freshness and flavour - so, this makes about 125g (just over 5 ozs) of Fool's Salt; you can of course increase the quantities if you wish!

- In a large bowl, mix all the ingredients together.
- The icing sugar and corn flour are essential as a stabilising element in this seasoning salt.
- Store the salt in an open Salt Pig or a bowl with a small wooden salt scoop/spoon.
- Add about 1/4 to 1/2 teaspoon to stews, sauces, casseroles, pies, soups, pasta, etc. Alternatively, sprinkle over roast chickens or meats, salads, breads and pizzas.

PROVENCAL SEASONING SALT
After ordering this from www.worldspice.com & absolutely loving the flavor, I used it sparingly to preserve my stash. Then my logic kicked in. It's an easy task to make my own. Now I use it liberally especially on popcorn!

Steps:
- Add salt to a coffee grinder, herb mill or small food processor.
- Process until the granules are of table salt size. ( Time will vary according to which type of appliance you're using. In my little Handy Chopper it takes less than 20 seconds.).
- Pour in the herbes de provence and process until the pieces are small enough to pass through a salt shaker. Again, time will vary.
- Store in a salt shaker or spice container with shaker top.
- Voila! You've made your own special seasoning salt.

- Heat grill to medium. In a small bowl, combine lemon zest, Italian seasoning, red-pepper flakes, anise seed, 3/4 teaspoon salt, and teaspoon pepper. Set spice mixture aside.
- Place four 14-inch squares of heavy-duty aluminum foil on a work surface. Dividing evenly, place onion on one half of each square (leaving a 2-inch border), followed by the zucchini; season with salt and pepper. Top with fish; sprinkle with spice mixture. Top with tomato; drizzle with oil. Fold foil over ingredients; crimp edges to seal.
- Place packets on grill. Cover and grill until fish is just cooked through, 10 to 12 minutes. Remove packets from grill; open carefully (hot steam will escape), and transfer fish Provencal to serving plates.

I use this basic seasoning salt on just about everything. If you feel the need to add some heat to it, you could add some dried and ground hot pepper to it.
