HAMBURGERS (TAVERN STYLE)
Here is the hamburger you get in better taverns and bars, plump and juicy, with a thick char that gives way to tender, medium-rare meat. It is best cooked in a heavy, cast-iron skillet slicked with oil or fat. Ask a butcher for coarse-ground chuck steak, with at least a 20 percent fat content, or grind your own. Keep it in the refrigerator until you are ready to cook, and then when you do, form your patties gently. Season after the meat is in the pan.

Steps:
- Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 4 small piles of around 8 ounces each, and then lightly form these into thick patties of around 3 1/2 inches in diameter, like flattened meatballs. Season aggressively with salt and pepper.
- Increase heat under skillet to high. Put hamburgers into the skillet with plenty of distance between them and allow them to cook, without moving, for approximately 3 minutes. Use a spatula to turn hamburgers over. If using cheese, lay slices on meat.
- Continue to cook until meat is cooked through, approximately another 3 to 4 minutes for medium-rare. Remove hamburgers from skillet and allow to rest for approximately 5 minutes; meanwhile, toast the buns. Place hamburgers on buns and top as desired.

Steps:
- Peel the potatoes, then slice into thin wedges or cut into 3/4-inch dice. Heat a skillet over medium-high heat and add a drizzle of EVOO. Add the bacon and cook until crisp, then drain on a paper-towel-lined plate. Add the potatoes to the fat in the skillet and season with a little salt and lots of pepper. Cook until browned, 5 to 6 minutes. Cover with foil and cook for 5 minutes. Remove the foil and cook until crisp, 7 to 8 more minutes.
- Mix the sour cream, chives, dill, garlic, horseradish, 2 tablespoons parsley and half-and-half or milk in a small bowl. Season with salt and pepper.
- Mix the beef, Worcestershire sauce, dry mustard cayenne or hot sauce and the remaining 2 tablespoons parsley in a large bowl. Sprinkle with salt and lots of pepper.
- Heat a cast-iron skillet or griddle over medium-high heat. Brush with oil, then add the beef mixture in 4 loose balls of equal size (do not shape them with your hands). Flatten with a spatula into 3/4-inch-thick patties. Scatter the onion slices over the top and press in with the spatula. Cook for 3 minutes, then flip and press the onion into the patties. Cook for 2 more minutes. Douse the pan with the beer and lay the cheese over the patties. Cover and cook until the cheese melts, about 1 minute.
- Serve the burgers on the rolls with pickles and watercress. Drizzle the horseradish sauce over the potatoes and serve on the side.
PUB PATTIES (BURGERS) WITH HORSERADISH SAUCE AND CRESS
Entered for safekeeping, From Every Day with Rachael Ray, June/July 2009. If only the Wimpy burger I tried long ago had been anything like this! This is very British with horseradish, Worcestershire sauce, and watercress (although the British prefer cress sprouts, which are tinier and have excellent flavor, but in the U.S. you'd be lucky to find watercress). Personally, I love the bite of horseradish with my beef.

Steps:
- In a small bowl, stir together the sour cream, applesauce, breadcrumbs, horseradish, 1/4 cup chopped chives, and a generous amount of pepper. Cover and refrigerate.
- Meanwhile, in a large bowl, combine the beef, Worcestershire sauce and parsley; season with salt and pepper.
- Form into 4 patties, press your thumb into the center of each patty to prevent bulging during cooking, and coat each with olive oil.
- In a large skillet, cook the patties over high heat until the bottoms are well-browned, about 4 minutes. Flip, lower the heat and cook for 4 more minutes for medium-rare.
- Top each roll bottom with some of the watercress or cress sprouts, a beef patty, lots of horseradish sauce, and a sprinkling of chives. Crown with the roll's top.

GRILLED BURGERS WITH HORSERADISH SAUCE
These burgers are a twist on the traditional backyard favorite. A dollop of dill and horseradish dressing gives extra bite to this standard. They are made with lean ground beef to keep the fat content low, and includes grated carrots and chopped fresh mushrooms to sneak in some veggies.-Deb Anderson, Joplin, Missouri

CHEDDAR-HORSERADISH BURGERS
Fattier (versus leaner) cuts of meat and poultry make the juiciest burgers. To maximize flavor, season the outside of burgers in addition to the meat mixture.

Steps:
- Heat grill to medium-high. In a medium bowl, place beef, horseradish, Worcestershire sauce, 1 teaspoon coarse salt, and 1/4 teaspoon pepper. Mix very gently with a fork to combine, being careful not to overwork meat (which would make burgers dense).
- Gently form meat into 4 equal-size patties, 4 inches in diameter and 1 inch thick. With thumb, make a 1/2-inch-deep indentation in the center of each patty (this helps keep burgers flat during grilling).
- Moisten a folded paper towel with oil; grasp with tongs and rub over grates. Season burgers with salt and pepper. Grill 4 to 7 minutes per side for medium-rare, placing cheese on second side for last 3 to 4 minutes of cooking.
- Serve on English muffins (toasted on grill, if you like), with desired toppings.

GRILLED TURKEY BURGERS WITH CRANBERRY HORSERADISH DRESSING
This is my favorite recipe! We had these at my niece's birthday party, and it was a hit. They are the moistest turkey burgers you will ever have. I usually make a double batch and form into patties and then freeze them. Pull them out when you are ready to grill! Delicious and moist! Best burgers ever!
