SUPER FAST PUFF PASTRY BREADSTICKS
I posted "Easiest Breadsticks Ever", recipe #175415, they are a very easy homemade breadstick. Today I came across an easier and faster breadstick (from Paula's Home Cooking), but, these aren't exactly all homemade like the other recipe. I have not made them yet, but I will be tonight!

Steps:
- First preheat your oven to 400 degrees and lightly grease a baking sheet.
- On a lightly floured surface, unfold pastry sheets, cutting each sheet into 13 strips, about 3/4 by 10-inches apiece.
- In a shallow dish (pie pan), combine Parm. cheese, basil, and garlic.
- Brush pastry sticks with melted butter.
- Roll pastry in cheese mixture, lightly coating each side.
- Gently twist pastry sticks, and place on a prepared baking sheet.
- Bake for 12 minutes.
- Remove to wire racks to cool.

PUFF PASTRY CHEESE STICK APPETIZERS
These are quick, fabulous, and definitely a crowd pleaser :) hope you enjoy them! They will keep in a tightly covered container for about 4 days, but they are best served right from the oven. Instead of using the herbs you can also try this recipe using poppy seeds or caraway seeds!

Steps:
- Preheat your oven to 400°F.
- Then take a bowl, and a cheese grater (or food processor) and grate cheese into the bowl, or in the food processor.
- Add your herbs, garlic powder, pepper and sesame seeds to the cheese, and stir to combine.
- Beat eggs in a long baking dish.
- Dip both sides of defrosted dough in the beaten eggs and dredge it lightly in the cheese mixture.
- Then take the seasoned sheets of dough and place them on sheets of wax paper.
- Using a pastry wheel, cut dough into 6x1 inch strips.
- Then take those strips, and twist each of them into spiral shapes and place about 1 inch apart from one another on a foil-lined baking sheet.
- Bake your cheese sticks in the oven and bake for approximately 15 minutes.
- Using a wide spatula, carefully remove from pan and serve.

ITALIAN CHEESE STICKS

Steps:
- Line a baking sheet with parchment.
- Lightly roll out the sheet of pastry into a 10-by-12-inch rectangle, then brush with the melted butter. Sprinkle over the mozzarella, 1/2 cup of the Parmesan, the oregano and basil. Using a rolling pin, press the cheese into the pastry. Cut the 12-inch side of the pastry into 12 strips. Twist each strip about 5 times and transfer to the prepared baking sheet. Place in the freezer for 20 minutes.
- Preheat the oven to 400 degrees F.
- Mix together the egg and 1 teaspoon water in a small bowl. Brush the strips with the egg mixture and sprinkle over the remaining 1/4 cup Parmesan. Bake until golden brown and puffed, 10 to 12 minutes. Let cool before removing from the baking sheet. Serve the cheese sticks with warm marinara alongside.
PUFF PASTRY TWISTS
Steps:
- Preheat the oven to 400 degrees F. Line a sheet pan with parchment or buttered waxed paper.
- Unroll the puff pastry on a work surface. Brush the pastry generously with melted butter.
- In a small bowl, toss together the sugar and cinnamon. Sprinkle evenly over the pastry.
- Working lengthwise, cut the pastry in half and then cut each half into 6 even strips, each 3/4-inch wide. Twist the strips to make long twisted "straws".
- Transfer to the prepared pan, pushing the ends down with your thumb to help them stay in place on the pan and remain twisted. Bake until puffed and golden brown, about 20 minutes.
- To make the sauce, heat the milk in a saucepan. Pour the hot milk over the chocolate and whisk to melt it. Whisk in the peanut butter until smooth. Keep sauce warm until ready to serve.
- To serve, place the twists on a tray and serve with the sauce along side for dipping.

- Unfold thawed frozen puff pastry on a lightly floured surface. Cut into pieces just large enough to wrap around your food (see below) with a 1/2-inch overlap. Wrap, moisten the edge with water and pinch to seal.
- Transfer to a parchment-lined baking sheet, seam-side down. Whisk 1 egg with 2 tablespoons water; brush on the pastry and freeze until firm, about 20 minutes.
- Preheat the oven to 400 degrees F. Bake until the pastry is puffed and golden, 20 to 25 minutes.

QUICKEST PUFF PASTRY

- Cut 8 ounces (2 sticks) butter into 1/2 to 1/4-inch dice, place on a plate and refrigerate while preparing remaining ingredients.Measure water and add salt; stir to dissolve and set aside.
- Coarsely dice remaining 4 tablespoons (1/2 stick) butter. Place flour in work bowl of food processor fitted with metal blade; add 4 tablespoons butter and pulse until butter is absorbed -- about ten to twelve 1-second pulses.
- Add remaining butter and pulse once or twice to distribute. Add water and pulse 3 or 4 times, just until dough forms a rough ball. Do not over-process.
- Flour work surface and scrape dough from work bowl. Shape dough into a rough rectangle and place between 2 pieces of plastic wrap. Press dough with rolling pin to flatten, then roll back and forth several times with rolling pin to make a 12 by 18 inch rectangle of dough.
- Peel away plastic wrap and invert dough to floured work surface. Peel away second piece of wrap. Fold dough in thirds in the width, folding the top third down and the bottom third up, to make a 6 by 18-inch rectangle, then roll up the dough from one of the 6-inch ends, making sure to roll end under dough. Press the dough into a square, wrap in plastic and refrigerate 1 hour, or until firm.

- Cut 1 cup (2 sticks) butter into 1/4-inch cubes. Place in an even layer on a plate and transfer to refrigerator to chill.
- Place flour and salt in the bowl of a food processor and pulse to combine. Cut remaining 1/4 cup (1/2 stick) butter into thin slices and add to food processor; pulse to combine. Add 1 cup chilled butter; pulse 3 times, 1 second each pulse. Add half of the water and pulse once; add remaining water and pulse twice. Dough will not form a ball.
- Remove blade from processor by lifting up with the handle. Scrape dough from bowl onto a lightly floured work surface. Lightly flour dough and, using your hands, squeeze and shape dough into a cylinder. Press down to flatten into a rectangle.
- Starting at the narrow end furthest away from you, use a rolling pin to press the dough firmly in parallel strokes close to one another. If there are sticky pieces of butter on the surface, cover with a large pinch of flour and press with the rolling pin to combine. Clean off the rolling pin as you go to make sure nothing sticks to the dough. Continue pressing with the rolling pin, working towards the narrow end closest to you.
- Roll dough into a 10-by 20-inch rectangle. Fold the 10-inch ends over the middle (like a letter) to make three layers. Position one of the (about) 6-inch ends to face you and roll up dough like a jelly roll. Place dough on a lightly floured work surface, seam-side down. Sprinkle top of dough lightly with flour and press down using your hand to form a rectangle.
- Wrap dough in plastic wrap and transfer to refrigerator for at least 3 hours and up to 3 days before using.
