PUMPKIN SHELL CASSEROLE

whats better then not having to wash the casserole dish when your done. This is a great fall evening recipe for your family or a house full of guest.

Steps:

  • 1. carve an opening at the top of your pumpkin and save the top. Scoop out the seeds and pulp while your doing that start to Brown hamburger and onion. Drain well.
  • 2. Mix in remaining ingredients Put pumpkin on cookie sheet. Fill pumpkin with meat mixture.
  • 3. Place in oven and bake pumpkin with lid on for 1 hour at 350 degrees F or until pumpkin is tender. Ladle out at the table directly from the pumpkin

1 medium pumpkin
1 medium onion,chopped
2 lb ground beef
2 Tbsp soy sauce, light
2 Tbsp light brown sugar
4 oz mushroom pieces
1 can(s) cream of chicken soup or cream of celery
2 c cooked rice
8 oz celery, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the pumpkin, evaporated milk, sugar, flour, eggs, vanilla, melted butter and ground cinnamon to taste. Spoon into a casserole dish.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

Steps:

  • combine pumpkin, egg, vanilla, cinnamon, salt, milk and syrup and pour into a casserole dish (1.5 qt or 9x9).
  • mix brown sugar, flour, coconut, pecans with butter to form crumbs and sprinkle evenly on the pumpkin
  • bake at 350 for 30-45 minutes.

Steps:

  • Preheat oven to 350°.
  • Wash pumpkin and cut a lid in the top.
  • Scrape out seeds and clean.
  • Combine remaining ingredients in a mixing bowl and toss gently.
  • Spoon mixture into pumpkin shell.
  • Replace lid and place pumpkin on lightly greased cookie sheet.
  • Bake for 1 hour and 15 minutes.
  • Remove from oven.
  • Top with sour cream if desired.
  • May be served hot or cold.

  • In a large skillet over medium heat heat 1 tablespoon oil and add onion shallots, and garlic cook for 1-2 minutes, until shallot just starts to become translucent. Add in pumpkin or squash and cook until just about tender, about 8 minutes. Add in chicken, and a big pinch of salt and pepper and continue cook until no pink remains, about 8 minutes. Add in 2 cups of spinach and cook for 3-5 minutes, until spinach starts to wilt. Remove from heat and set aside.
  • In a small bowl mix all sauce ingredients together and set aside. Grease a 8″ x 8″ (or similar sized) casserole dish and set aside.
  • Take spaghetti squash out of oven, let cool. Using a fork scrape out the spaghetti squash into a greased casserole pan. Add in pumpkin and chicken mixture, and top with the sauce. Top with Parmesan, if desired.
