PUMPKIN POSOLE

Great comfort food. I love to dish up a mug of this stew and dip some really good wheat or pumpernickel bread into the broth during cold winter nights (yes, I do get cold in Arizona).

Steps:

  • HEAT oil in a large saucepan over medium-high heat.
  • Add chicken, onion and carrot; cook for 3 to 4 minutes or until chicken is no longer pink.
  • Add celery and bell pepper; cook for 3 to 4 minutes or until vegetables are crisp-tender.
  • STIR in pumpkin, broth, hominy, sour cream, cilantro, salt, pepper, oregano, cumin, and nutmeg.
  • Reduce heat to low; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.

1 tablespoon vegetable oil
1 lb boneless skinless chicken breast, cut into 1 inch pieces
1 cup chopped onion
1/2 cup sliced carrot
1 cup sliced celery
1/2 chopped red bell pepper
1 3/4 cups solid pack pumpkin
1 3/4 cups chicken broth
1 1/4 cups hominy
1/2 cup sour cream (I prefer fat free)
3 tablespoons chopped fresh cilantro (Parsley may be substituted)
1/2 teaspoon salt
1/2 teaspoon ground black pepper (I prefer freshly ground)
1/2 teaspoon dried oregano, crushed
1/2 teaspoon ground cumin
1/8 teaspoon ground nutmeg (I promise this is good)

PUMPKIN PASTA

Pumpkin puree isn't just for pie. Think outside of the can and make this easy orange pasta in your food processor. It's the perfect way to use up leftover cans of pumpkin from the holidays. Add a sprinkle of Parmesan and some toasted pumpkin seeds for an upgrade.

Pumpkin Pasta image

Steps:

  • Bring a large pot of salted water to a boil. Dust a baking sheet with flour.
  • For the pasta: Put the flour and pumpkin puree in a food processor and pulse in short bursts until the mixture comes together and a dough forms, about 1 minute.
  • Turn the dough out onto a floured work surface. Divide into 4 equal pieces. Roll and cut the pasta to desired thickness using a rolling pin or a pasta machine. Cut into the desired shape, transfer to the prepared baking sheet and sprinkle with flour (this keeps the pieces from sticking together). Cover the pasta with plastic wrap for up to 4 hours if you are not cooking right away (see Cook's Note).
  • Cook the pasta until tender but not mushy (there shouldn't be a line of raw flour in the center), 2 to 5 minutes, depending on the thickness and shape. Drain thoroughly.
  • For the sage butter: Meanwhile, melt the butter in a large skillet over medium heat. Add the sage and cook, stirring occasionally, until the leaves are crispy and the butter begins to brown slightly and has a nutty aroma. Sprinkle in 1 teaspoon of salt. Add the drained pasta to the skillet and toss vigorously to coat. Season with salt and pepper.

Steps:

  • Heat oil in large saucepan over medium-high heat.
  • Add chicken, onion, and carrot, cook fo 3-4 minutes or until chicken no longer pink.
  • Add celery and bell pepper; cook for 3-4 minutes or until vegetables are slightly tender.
  • Stir in pumpkin, broth, green chili, hominy, sour cream, cilantro, and remaining spices/herbs.
  • Reduce heat to low; cook, stirring occasionally, for 10-15 minutes or until flavors are well blended.
  • CROCK POT INSTRUCTION:.
  • Follow step 1-2 as stated above.
  • Once chicken is cooked; add to crockpot with remaining ingredients (with exception of sour cream!).
  • Cook on low 6-8 hrs; stir in sour cream prior to serving.

Steps:

  • Layer pumpkin with sugar in a large bowl.
  • Cover and let stand overnight, stirring once or twice.
  • Next day, drain juice off of pumpkin into saucepan.
  • Bring to a boil and boil for 10 minutes.
  • Add pumpkin pieces, grated rind and chopped pulp of the lemon.
  • Add cloves (tied in a cheesecloth bag).
  • Cook on a slow boil for 40 minutes, or until pumpkin is clear and the mixture sheets from a spoon.
  • Remove the cloves and pour into hot sterile jars.
  • Seal.

Homemade Pumpkin Gnocchi image

Steps:

  • Combine pumpkin puree, 1/2 cup plus 1 tablespoon Parmesan cheese, salt, pepper, and nutmeg in a large bowl. Fold in egg white carefully, using a rubber spatula. Fold in whole wheat flour, 1/4 cup at a time, and mix until a soft dough forms. Mix in the all-purpose flour until incorporated into the dough. Make sure you don't overmix or gnocchi will be tough.
  • Turn dough out onto a lightly floured surface and roll into several 1-inch wide "snakes." Cut each snake into 1-inch pieces.
  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, about 3 minutes.
  • While gnocchi are cooking, combine evaporated milk and Parmesan cheese in a medium saucepan over medium heat. Bring to a simmer, stirring frequently with a wire whisk to prevent cheese from sticking to the bottom of the pan. Simmer until sauce reduces slightly, about 3 minutes.
  • Drain gnocchi and spoon into shallow bowls. Top with sauce and garnish with chopped parsley.
