PORTUGUESE CUSTARD TARTS - PASTEIS DE NATA

Portuguese Custard Tarts - Pasteis de Nata image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Lightly grease 12 muffin cups and line bottom and sides with puff pastry.
  • In a saucepan, combine milk, cornstarch, sugar and vanilla. Cook, stirring constantly, until mixture thickens. Place egg yolks in a medium bowl. Slowly whisk 1/2 cup of hot milk mixture into egg yolks. Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Cook, stirring constantly, for 5 minutes, or until thickened. Remove vanilla bean.
  • Fill pastry-lined muffin cups with mixture and bake in preheated oven for 20 minutes, or until crust is golden brown and filling is lightly browned on top

Queijadas De Nata (Cream Tarts) image

Steps:

  • Butter and cover 24 tins with the pastry of your choice.
  • Mix all ingredients well, beating alittle.
  • Fill tins half way.
  • Bake in a preheated 375 degree F (190 C) oven for about 20 minutes or until cream is solid.
  • Remove tarts from tins while hot. Cool.

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a blender, combine eggs, sugar and butter. Blend until smooth. Pour in flour and milk, a little at a time, blending until smooth again. Stir in vanilla.
  • Pour into muffin tins, filling 3/4 full. Bake in preheated oven 45 minutes, until golden brown. Serve hot or cold.
