QUESO POBLANO OR JALAPENO DIPPING SAUCE

All purpose cheese sauce: it can be a dip with tortilla chips, pretzels or on Nachos on Philly Cheese Steak or as a Cheese Whiz substitute. You can also replace the Poblano's with Jalepenos, or any other chili type pepper you like.

Queso Poblano or Jalapeno Dipping Sauce image

Steps:

  • Melt the butter in a medium saucepan over medium heat.
  • Add the flour and cook 1 minute.
  • Whisk in the milk and cook until slightly thickened.
  • Remove from heat and stir in the cheese, chiles, and season with salt and pepper, to taste.
  • Place the sauce into a bowl and sprinkle with chopped poblano.

1 tablespoon butter
1 tablespoon soy flour
1 cup milk
12 ounces shredded monterey jack cheese
2 poblano chiles (roasted, peeled, seeded and chopped)
salt & freshly ground black pepper
3 tablespoons chopped cilantro leaves

Grilled Poblano Queso Dip image

Steps:

  • Preheat an outdoor grill for high heat (400 degrees F -200 degrees C) and lightly oil the grate.
  • Lightly spray or brush poblano peppers with olive oil. Cook peppers on the preheated grill, turning every couple minutes, until charred and softened, 5 to 8 minutes.
  • Remove peppers from the grill and place in a large resealable plastic bag to steam, about 15 minutes. Peel off the charred skins. Discard seeds and chop peppers.
  • Melt butter in a saucepan over medium-high heat. Add flour and cook, stirring, about 1 minute. Add onion and cook for 1 minute more. Whisk in milk slowly and cook, stirring constantly, until slightly thickened, 3 to 5 minutes. Reduce heat to low and add Monterey Jack cheese, cream cheese, salt, paprika, pepper, red pepper flakes, and cayenne; whisk until the cheeses have melted and are blended in, about 5 minutes. Stir in chopped poblano peppers.

CREAMY QUESO WITH PICKLED JALAPEñOS

Queso, the crown jewel of Tex-Mex cuisine, is a creamy, tangy dip made with melted cheese. But it can't be just any cheese. This is one of those rare instances (see also: cheeseburger) where the preferred cheese is good, old-fashioned, highly processed American cheese. Velveeta is tops, but Land O'Lakes and Boar's Head have deli versions that will do. Kraft singles work, too, but it's a lot of unwrapping. The pickled jalapeños in this recipe aren't traditional, but they do add some welcome heat and a bit of tang that cut through the richness.

Creamy Queso With Pickled Jalapeños image

Steps:

  • Place half of the jalapeños in a small bowl and cover with vinegar. Season with salt and pepper and set aside.
  • Heat oil in a medium pot over medium heat. Add garlic, onion and remaining jalapeño. Season with salt and pepper and cook, stirring occasionally, until vegetables have softened and onion is translucent, but not browned, about 5 to 8 minutes. Add milk and bring to a simmer. Reduce heat to low and add cheese, one handful at a time, whisking so that none of it settles on the bottom (it can burn that way), encouraging it to melt.
  • Keep an eye on the pot and continue whisking until the cheese is completely melted (it can take a while for the American cheese to totally melt) and the mixture is thickened considerably, 8 to 10 minutes. Season with salt and pepper and keep on low until ready to serve (you can always thin with milk if it thickens too much).
  • To serve, ladle queso into a large bowl and top with sour cream, scallions, reserved pickled jalapeños and cilantro. Serve with chips for dipping.

Queso Fundido With Roasted Poblano Vinaigrette image

Steps:

  • Make the vinaigrette: Preheat the oven to 425 degrees F. Put the poblanos on a baking sheet and roast, turning, until browned, about 15 minutes. Transfer to a bowl, cover and let sit 5 minutes. Peel the poblanos with your fingers, then halve, seed and roughly chop.
  • Combine the roasted poblanos, vinegar, garlic, honey, canola oil and 2 tablespoons water in a blender; puree until smooth. Season with salt and pepper.
  • Make the queso fundido: Melt the butter in a medium saucepan over medium heat; add the flour and cook, whisking, 1 minute. Whisk in the milk and cook, whisking, until slightly thickened, about 5 minutes. Remove from the heat and stir in the monterey jack. Add 1/4 teaspoon salt, and pepper to taste. Turn on the broiler.
  • Scrape the cheese mixture into an 8-inch cast-iron pan and arrange the goat cheese rounds on top. Broil until golden brown in spots. Drizzle with the vinaigrette and sprinkle with the cilantro. Serve with tortilla chips.

CREAMY JALAPENO DIPPING SAUCE

For those who love spicy appetizers! I usually have no use for any of the usual dips that are served with spicy appetizers like chicken wings. Sour cream takes the edge off the spice (which for me is defeating the purpose) but this dip is one that I can enjoy because it accents the heat as opposed to just reducing it. Sure the sour cream still reduces the bite but it has a unique kick of its own now! Bring it on!
