These are delicious little quiche tarts perfect for a party, shower, or just to have on hand for fast breakfasts during the week. Try substituting different fillings to suit your own taste. Any variety of cheese can be used.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Arrange tart shells in 2 muffin tins; line shell each with a layer of pie weights or dried beans.
- Bake shells in the preheated oven until edges of crusts are lightly browned and about 75% cooked, 5 to 10 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble when cooled.
- Divide 1 cup Swiss cheese, bacon, and green onions evenly into the tart shells.
- Whisk eggs, milk, mustard, salt, and black pepper together in a bowl. Ladle egg mixture into each tart shell about 2/3 full. Top each tart with the remaining 1/4 cup Swiss cheese.
- Bake in the preheated oven until egg is set in the middle of each tart and shells are browned, 25 to 30 minutes.

GINA'S QUICHE TARTLETS

Steps:
- Preheat the oven to 400 degrees F. Spray 6 (4 1/2-inch) tartlet pans with nonstick spray.
- Roll out the pie dough. Using a 5-inch round cutter, punch out 6 circles of dough.
- Press each dough round into the prepared tartlet pans, making sure it covers the sides and bottoms. Bake until golden, 15 to 18 minutes. Remove and let cool slightly.
- Start on the filling while the crust is baking. Add the bacon to a medium saute pan over medium heat and cook until crisp. Add the green onions and garlic and saute until soft, 1 to 2 more minutes. Season with salt and pepper and remove from heat to cool.
- Lower the oven to 350 degrees F.
- Whisk together the eggs and half-and-half, and then stir in the bacon and green onion mixture. Season with a pinch of salt and pepper. Crumble the goat cheese into the baked shells.
- Ladle the mixture into the baked tartlet shells. Place the tartlet shells on a sheet tray (to catch drips) and bake until golden and cooked through, about 25 minutes.

- Roll the pastry out onto a lightly floured work surface until very thin. Cut out circles that are 1cm larger in diameter than the tartlet tins. Line the tins with the pastry circles (you may need to bake these in batches if you do not have enough tins) pressing into the edges and up the sides. Re-roll any pastry offcuts until you've lined all the tins, then chill for 30 mins (if you're baking in batches, chill the off-cuts too).
- Heat the oven to 200C/180C fan/gas 6. Line each pastry case with a piece of foil and fill with baking beans or uncooked rice. Bake for 10 mins, then lift out the foil and beans and bake for another 5 mins. Meanwhile, fry the bacon in a little oil until crisp.
- Divide the bacon and half the cheese between the cases. Beat the eggs and cream together, then pour over the bacon and cheese until the cases are almost full. Scatter over the remaining cheese. Bake for 20-25 mins until golden and puffed up. Leave to cool, then chill before serving. Can be made a day ahead.

- Preheat oven to 375°. In a small bowl, beat cream cheese and milk until smooth. Add the eggs, cheese, green pepper and onion. , Separate crescent dough into 8 triangles; press onto the bottom and up the sides of greased muffin cups. Sprinkle half of the bacon into cups. QUICHE MARAICHERE (FRENCH VEGETABLE TART)
This delicious quiche is unusual in that it has a lot more vegetables than custard. It is great both warm and at room temperature. The recipe is from Dorie Greenspan's wonderful cookbook, "Around My French Table: More Than 300 Recipes from My Home to Yours". If the sides of your tart pan are not very high or if your crust has shrunk, you might not be able to get all the custard into the pan. If you think you've got a short-sided crust, make a smaller amount of custard using 1/2 cup heavy cream and 1 egg. You can also try this as a crustless quiche.

- Put a skillet over medium-low heat, add the butter and, when it's melted, toss in the vegetables. Cook, stirring, for about 10 minutes, or until the vegetables are tender. Season with salt and pepper, then scrape the vegetables into a bowl and let them cool while you preheat the oven.
- When you're ready to bake the quiche, center a rack in the oven and preheat the oven to 400°F.
- Put the partially-baked crust on a lined baking sheet.
- Spoon the vegetables into the tart shell and spread them evenly along the base of the crust - the vegetables will just about fill the crust. Whisk the cream, egg and egg yolk together, season with salt and pepper and carefully pour the custard mixture over the vegetables. Depending on how your crust baked, you may have too much custard - don't push it. Pour in as much custard as you can without overflowing the sides of the crust, wait a few minutes until it's settled into the vegetable's nooks and crannies then, if you think it will take it, pour in a little more. Very carefully slide the baking sheet into the oven. (If it's easier for you, put the quiche into the oven without the custard, then pour in the cream.).
- Bake the quiche for 20 minutes, sprinkle the cheese over the top and bake for another 10 to 15 minutes, or until the cheese is golden and, most important, the quiche is set and uniformly puffed (wait for the center to puff). Transfer the quiche to a rack and cool until it's only just warm or until it reaches room temperature before serving.
MINI QUICHE TARTS
These mouth-watering quiches make such a delicious snack. We've made the base out of almonds and gluten free oats and the filling is eggs, sun dried tomatoes, kale and red onion with a dash of nutritional yeast. Traditional quiche is not usually a healthy option as it generally contains quite a lot of cream cheese. For this nutritious alternative we've substituted cream cheese for skimmed milk and used nutritional yeast to give the cheesy flavour. We've also used a mix of whole eggs and egg whites to help manage cholesterol levels. You can choose any fillings you like instead of the sun dried tomatoes, kale and red onion. Hope you enjoy!

- Place all the case ingredients into a food processor and pulse until combined. If the mixture is too sticky, add more ground almonds.
- Grease your cake tins and place a tablespoon of the mixture into each tin. Push it along the sides and the base until all of the tin is covered. Repeat with all 12 tins.
- Preheat the oven to 170C/340°F.
- Bake in the oven for 15 minutes.
- Meanwhile start making the filling. Gently fry the onion and kale until softened.

- Preheat the oven to 350F and lightly butter a 12-hole deep muffin tin.
- Roll out the pastry on a lightly floured surface. Using a 4-5in pastry cutter, cut out 12 circles. Loosely press them into the muffin tin, retaining a frilly or wobbly edge to them, rather than pressing in firmly around the edges. Chill in the refrigerator.
- In a mixing bowl, beat together the egg yolks, whole eggs and cream and season with salt and pepper. This is your basic mixture, ready to add your chosen flavours.
- If you are doing the goat cheese and tomato filling, crumble the goat cheese into the chilled pastry cases and scatter over the basil. Pour over the egg mixture and then top each tart with thin slices of tomato.
