SHEET PAN TURKEY CHILI WITH CORNBREAD "DUMPLINGS"

A different way to prepare chili and cornbread! This is a bit on the spicier side, so go easy on the chili powder and jalapenos for a milder version. This really fills up the sheet pan to the top, but don't worry, it will fit! If you're worried about spills, place aluminum foil on the oven rack before baking.

Sheet Pan Turkey Chili with Cornbread

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12x17-inch sheet pan.
  • Crumble ground turkey and place onto one half of the sheet pan. Place onion, bell pepper, garlic, and celery on the other half of the sheet pan. Drizzle both with oil, and season with salt and pepper.
  • Bake in the preheated oven, stirring once, until meat is cooked through and vegetables are soft, about 15 minutes.
  • Meanwhile, place diced tomatoes, kidney beans, chicken broth, tomato paste, corn, jalapenos, molasses, Worcestershire sauce, chili powder, oregano, paprika, cumin, garlic powder, onion powder, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Stir until well combined. Carefully pour mixture over the turkey and vegetables, and gently stir to combine.
  • Whisk cornmeal, flour, baking powder, and salt in a bowl until combined. Add milk, oil, honey, and egg, whisking until combined. Place about 8 dollops of the batter over the top of the chili. Sprinkle each "dumpling" with Cheddar cheese.
  • Carefully return sheet pan to the hot oven, and bake until chili is bubbling and cornbread is browned on top, 30 to 35 minutes. Allow to cool for 10 minutes. Sprinkle with sliced green onions just before serving.

1 large onion, chopped
1 orange bell pepper, chopped
4 cloves garlic, roughly chopped
1 celery stalk, chopped
2 tablespoons vegetable oil

1 ½ cups low-sodium chicken broth

2 teaspoons chili powder
1 ½ teaspoons dried oregano

¾ cup whole wheat flour
4 teaspoons baking powder

Steps:

  • Heat the olive oil/butter in a pan over a medium-low heat. Add the onion, carrot and celery with a touch of salt and pepper and cook, stirring regularly for 10-15 minutes. Take care not to let the vegetables colour or stick to the pan.
  • Once the vegetables have softened add the garlic and cook for a further minute or two. Add the tomato purée and oregano and cook for a further minute.
  • Turn up the heat and add the turkey mince. Keep stirring and breaking-up the meat for a few minutes until everything is combined and the meat isn't pink anymore. Don't let anything catch on the bottom of the pan.
  • Add the stock, tomatoes, balsamic vinegar and a pinch of sugar and bring to the boil. Turn the heat down to low and simmer for 45 minutes to an hour, stirring occasionally to break up the tomatoes.
  • Towards the end of the cooking time stir more frequently, scraping the bottom of the pan to ensure nothing catches and burns. It's ready once the sauce has thickened and/or reached the desired consistency.

EASY AND QUICK CREAMED TURKEY

A tasty easy recipe to use up leftover turkey, serve it on toast or puff pastry shells, makes a great weeknight meal! This recipe can easily be doubled. Feel free to add in 1 cup grated old cheddar cheese along with the Parmesan cheese, and also some corn or peas. If you prefer a really thick creamed sauce then add in a tablespoon more of flour.

Easy and Quick Creamed Turkey image

Steps:

  • Melt the butter over medium-low heat in a saucepan; add in the mushrooms and saute until golden and tender.
  • Add in flour and bouillon powder; stir until smooth (about 1 minute).
  • Slowly add in the broth and half and half cream; cook stirring until smooth, thickend and bubbly.
  • Add in Parmesan cheese and pimiento; mix to combine.
  • Season with seasoned salt and black pepper to taste.
  • Add in diced turkey and cook until just heated through (do not boil).
  • Spoon over toast.

  • Heat 1/4 cup oil over medium heat, in a heavy pot or Dutch oven, with a lid. Add onions and red pepper. Cook for 2 minutes, to soften the onions. Add 1 tablespoon garlic and cook, stirring, for 1 minute, until fragrant (don’t let it brown). Add tomato puree, tomato paste, water and 1/2 teaspoon of salt. Stir to combine. Bring to a boil and immediately lower to a gentle simmer. Partially cover the pot to prevent sputtering. Simmer sauce for 10 minutes. Remove from heat.

  • Serve sauce over pasta, spaghetti squash, or zoodles. For a richer, creamier consistency, stir 1/2 cup of ricotta cheese into the sauce before serving. Garnish with freshly grated parmesan cheese and slivered basil.
