CLASSIC HOT CHOCOLATE

Steps:
- Combine the milk, heavy cream, sugar, cocoa powder and a pinch of salt in a medium saucepan. Cook over medium heat, whisking occasionally, until the sugar and cocoa powder dissolve and the milk is steaming; do not boil.
- Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.
QUICK HOT CHOCOLATE
Serve with jumbo marshmallows. Drizzle some chocolate and caramel on top of the marshmallows and enjoy!

- Heat water and chocolate in a saucepan over medium heat, stirring constantly, until chocolate is melted and mixture is smooth, about 5 minutes.
- Stir sugar and salt into chocolate mixture. Bring to a boil, reduce heat to low, and simmer, stirring constantly, until sugar is dissolved and flavors combine, about 4 minutes. Pour milk into chocolate mixture and cook until hot. Beat with a whisk until foamy or stir until smooth.

Steps:
- Mix all dry ingredients (Exclude cinnamon) together in small, separate bowl.
- Fill milk in coffee-mug.
- Add cinnamon to milk, and heat to taste.
- After heated, stir until cinnamon is dissolved.
- After that, add dry ingredients, and stir.
- Finally, after all dry ingredients are stirred, add vanilla extract.
- To top it off, add some marshmallows! (Optional).

- Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

- Pour the milk into a medium saucepan. Make a slit through the vanilla pod, scrape the seeds and add to the saucepan together with the vanilla pod. Bring to a boil, then reduce the heat and simmer for 10 minutes, stirring constantly.
- In a separate saucepan placed on low heat, melt the chocolate together with the cream, stirring constantly to prevent chocolate from burning.
- Add unsweetened cocoa powder, and slowly pour in the hot milk over the chocolate mixture, a ladle at a time, stirring as you go to make sure it’s fully incorporated before adding more milk. This process enables the hot chocolate to be thick, creamy and perfectly chocolaty.
- If using, infuse the cinnamon stick and ½ chili pepper. Then, simmer for about 5 minutes on medium high heat until the mixture thickens, stirring constantly. When hot and fragrant, take out the chili, cinnamon stick and vanilla pod, and serve immediately in 2 bowls or cups.
