- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain pasta, and set aside.

- Remove cover, and bake an additional 5 minutes.
- In a small saucepan heat olive oil with remaining garlic. Toss the pasta with the olive oil and garlic mixture. Serve the shrimp over the pasta with additional lemon slices on the side.

20-MINUTE INSTANT POT SHRIMP SCAMPI PASTA
The genius of this recipe is that all of the ingredients--wine, garlic, shrimp -- even the pasta -- cook together in one pot. Just make sure to use shrimp that's still frozen or they will overcook. You don't have to serve garlic bread with the dish, but there's nothing better for sopping up all that delicious buttery sauce.

Steps:
- Add the butter, olive oil and garlic to a 6- or 8-quart Instant Pot® multi-cooker and set to high saute (see Cook's Note). Cook, stirring often, until the garlic is softened but not browned, about 3 minutes. Add the wine, lemon juice and zest, red pepper flakes, 2 teaspoons salt and several grinds of pepper. Bring to a boil and let simmer 1 minute. Add 2 cups water, then add half of the pasta all in one direction and then the other half of the pasta in a criss-cross fashion. Top with the shrimp and half of the scallions.
- Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 1 minute. After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 5 minutes, being careful of any remaining steam, unlock and remove the lid.
- Using tongs, toss the pasta to evenly coat with the sauce and break up any clumps. Top with the remaining scallions and serve with salad and garlic bread if using.
QUICK AND EASY SHRIMP SCAMPI
I searched before posting and this recipe is like several other recipes as far as ingredients but the cooking method is a little different. I leave the tails on for an appetizer and remove the tails to serve with pasta. I like it with rice noodles but it's great with any pasta.

Cook, undisturbed, until the bottoms of the shrimp begin to turn pink, about 1 minute. Flip the shrimp over and cook until almost cooked through, about 1 minute more. Transfer the shrimp to a plate and set aside.
- Reduce the heat to medium, add the garlic, pepper flakes and a little more oil if the pan seems dry; cook, stirring often, until the garlic just starts to turn golden, about 1 minute. Add the wine, scraping up any caramelized bits from the bottom of the pan, and simmer until most of the wine has evaporated.
- Whisk in the butter one piece at a time, then season the sauce with salt and lemon juice from one lemon half. Add the cooked shrimp, any juices accumulated on the plate, the lemon zest and parsley (if using) and toss together until the shrimp are warmed through, about 1 minute. - Put a pot on to boil for the pasta. Thaw the shrimp in the microwave, if needed then peel and devein them, also, if needed. When the pasta water starts to boil add some salt and the pasta. Stir up the pasta right away so it doesn't stick together. Chop the garlic, zest the lemon, slice another lemon and chop up the fresh parsley. Dried parsley or dried basil will work in a pinch if you don't have any fresh parsley.
- Put a skillet on at medium. Add a tablespoon of extra virgin olive oil and 2 tablespoons of butter. As soon as the butter melts add all of the remaining ingredients except the shrimp. Mix everything together and spread it out. Lay the shrimp out on top and as soon as they start to turn pink turn them over and pink up the other side. Then mix the shrimp up with the sauce.
- If the pasta isn't done yet lower the heat on the skillet to as low as it can go. When the pasta is done drain it and put it back in the pot. Put the Shrimp Scampi in with the pasta and toss it all together. If the pasta is done first drain it and put it back in the pot. Drizzle just a little bit of olive oil on it and put it back on the stove at as low a setting as possible until the Shrimp Scampi is done and when the shrimp is done put it on top of the pasta and stir it all together.

Since these are large shrimp, you may want to devein them as well (see blog post for tips on that). I recommend prepping every ingredient ahead of time since this recipe goes quick.

SHRIMP SCAMPI - QUICK AND EASY - 20 MINUTES MAX - POPPOP COOKS

- Put a pot of salted water on for the pasta and if the shrimp have to thaw out put them in a bowl of water. While the coming to a boil and the thawing out are going on lets put together a salad for tonight's veggie and chop up the garlic. Caprese Salad would be our choice for our Italian mood dinner.
- The salad is ready, the shrimp have thawed out and the pasta water is boiling. Put the pasta in the pot of water and stir it right away to keep it from sticking together. Remember to stir it a few times as it cooks. Put on a skillet that is large enough to handle all the shrimp laid out flat. Set the burner at medium and add the olive oil and 1/2 of the butter. When the butter has melted put in the garlic. As soon as you get the fragrance of the garlic cooking add the salt, pepper, parsley and red pepper flakes.
- Stir it all together and lay the shrimp out in the skillet. Give the shrimp just half a minute to a minute a side depending on their size. Then put in the rest of the butter, squeeze in the lemon juice and add the white wine. Oh yeah, and a splash of the pasta water.
