SUPER EASY SALMON CAKES
This recipe is a great way to used canned or leftover salmon, and is easily adapted to include whatever spices you like.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix together salmon, egg, olive oil, green onions, and 2/3 cup cracker crumbs. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet.
- Bake 10 minutes in the preheated oven, turning once, or until golden brown on both sides.

EASY SALMON PATTIES
My husband loves salmon patties and I am always finding ways to lighten it up to suit my taste. This recipe taste lighter and crispier.

Steps:
- Mix salmon, onion, and egg together in a bowl; stir in flour. Stir baking powder and 2 tablespoons reserved salmon liquid together in a separate bowl; stir into salmon mixture until mixture holds together when shaped. Add more flour if mixture is too soft. Add more reserved salmon liquid if mixture is too firm. Shape salmon mixture into small patties.
- Heat shortening in a skillet over medium heat.
- Spread cornmeal into a shallow bowl and press patties into cornmeal until evenly coated on both sides.
- Fry patties in the hot shortening until golden brown, about 5 minutes per side. Transfer patties to a paper towel-lined plate using a slotted spoon.

Healthy and quick - give these salmon patties a try. Add some homemade tartar sauce (1/4 c. light mayo, 1 T. pickle relish, dash lemon juice, and optional 1 t. horseradish) and some fresh corn on the cob.

Steps:
- Combine drained and flaked salmon with crushed crackers, egg substitute, Old Bay, and parsley.
- Form into 4 patties.
- Sprinkle with pepper.
- Add a small amount of oil to non-stick pan to coat, turn burner to medium.
- Add patties, saute until browned, approximately 2-3 minutes on each side.
- Garnish with lemon wedges and tartar sauce.
QUICK N' EASY SALMON PATTIES
I have used this recipe for many years and my family loves it, especially my husband. I think I got the recipe off of a crisco can when they still used paper wrapping on the cans.

Steps:
- Drain salmon; set aside 2 TBSP of the juice.
- In a medium mixing bowl, mix salmon, egg and onion until sticky.
- Stir in flour.
- Add baking powder to salmon juice and stir into salmon mixture.
- (Don't mix baking powder and juice and add until you are ready to start cooking the patties, otherwise it will become flat).
- Form into small patties and fry until golden brown (about 5 minutes) in hot crisco.
- Serve with tartar sauce (optional).
SO EASY SALMON PATTIES
This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. If you need a quick and yummy salmon dinner/lunch, try this out. It would be nice served in a pita pocket with lettuce, tomato, etc as well. If you use plain bread crumbs, mix in a handful of fresh chopped parsley.

Steps:
- Saute onions in 1 TBS olive oil until cooked through but not brown.
- Drain liquid from the salmon.
- Combine salmon, sauteed onion, breadcrumbs (parsley if you use plain breadcrumbs), eggs, salt, and pepper.
- Form mixture into patties.
- Melt butter and oil in a pan.
- Brown salmon patties on both sides (about 4-5 minutes per side).
- Place cooked patties on a paper towl to absorb excess oil.

- In the bottom of a large mixing bowl, lightly beat the egg. Add the drained salmon to the bowl. Add the bread crumbs, Greek yogurt, Dijon, white vinegar, onion powder, garlic powder, and cayenne. With a fork, lightly mix to combine, breaking apart the salmon further. Gently stir in the parsley.
- Scoop the mixture by 1/3 cupfuls and shape into 6 patties that are about a 1/2 inch thick. Arrange on a plate.
- In a large cast-iron or similar sturdy-bottomed skillet, heat 1 tablespoon of the oil over medium. Swirl to coat. Brown the patties on both sides, until the outsides are very deep golden brown and the patties are cooked through, about 5 to 6 minutes total. When flipping the patties, be very gentle and use a long, flexible spatula, such as a fish spatula. Enjoy immediately, topped with Greek yogurt, a squeeze of lemon, and a sprinkle of fresh parsley.
