Steps:
- Boil the noodles until al dente, then drain. Put the stock in a pan with the fish sauce, lime juice, star anise and pinch of sugar. Bring to the boil and add the noodles and prawns. Warm through, then pour into a bowl and serve topped with the mint, coriander and chilli.

- In a large saucepan over medium heat cook onion, garlic, ginger and crushed red pepper in oil for 2 minutes. Pour in broth, carrots, and celery and bring to a boil. Reduce heat, cover, and simmer for 5 minutes. Stir in snow peas and shrimp, cover, and cook for 3 minutes. Break noodles into 2-inch pieces and stir into soup; cover and cook 3 minutes more, until vegetables are tender and shrimp is pink. Stir in soy sauce and pepper and serve.

Steps:
- In a wok or large saucepan, bring the stock to the boil. Stir the sauces into the stock, then add the ginger. Simmer for a moment, then add the prawns: if raw, simmer for 2 mins until they turn pink; if cooked, add together with the bok choi, then cook for 2 mins more until just wilted.
- Slip all the noodles into the broth, then gently stir to loosen them. Bring the liquid back to a simmer, then cook for 2 mins more to warm them through. Scatter with spring onions and serve straight from the wok, using tongs for the noodles and a ladle for the broth.

- Bring a medium saucepan of water to the boil, then gently lower in the eggs and cook for 6 minutes for soft-boiled. Drain and run under cold water to stop them cooking more. Carefully peel, then cut in half and set aside. Meanwhile, soak the dried shiitake mushrooms in 100ml boiling water for 5 minutes.
- Put the stock, tamari sauce and five-spice in a large pan. Drain the mushrooms through a fine sieve into the pan, then add the mushrooms (discard any grit in the sieve). Bring to the boil, then reduce the heat and simmer for 2 minutes. Add the prawns and simmer for a further 3 minutes until pink and cooked through.
- Cook the noodles according to the packet instructions, then drain and divide among 4 bowls. Pour over the stock and top each bowl with 2 egg halves, some sliced spring onions and the sweetcorn and chopped coriander.
