Hot Pork Sandwiches with Swiss and Quick Fix Russian Dressing image

Steps:

  • Preheat broiler.
  • Lay open rolls out on a cookie sheet. Place pork on bottom halves. Top both sandwich halves with Swiss cheese. Place in the broiler until cheese is melted. Meanwhile, in a small bowl, combine ketchup, sour cream and pickles. Mix well to combine. Top sandwiches with dressing just before serving.

  • In a mortar and pestle, mash the onion to create a paste, or use a large heavy knife to mince and mash the onion into a paste. Transfer the onion paste to a small bowl and whisk in the mayonnaise, chili sauce, horseradish, hot sauce, Worcestershire sauce, and sweet paprika. Season with fine sea salt, if desired. DO AHEAD: The dressing can be prepared ahead and refrigerated, in an airtight container, up to 2 weeks.

  • Combine the cornichons, yolk, miso, mustard, vinegar, and 1 tablespoon water in a food processor. Pulse until the cornichons are just chopped. With the machine running, add the oils in a steady stream until the mixture is emulsified. Transfer to a large bowl. Stir in the ketchup and sriracha until fully incorporated. The dressing can be covered and refrigerated for up to 3 days.

10 cornichons (2 ounces)
1 large egg yolk
3 tablespoons white (shiro) miso (see Pantry, page 253)
2 1/2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
2/3 cup grapeseed or other neutral oil
2 tablespoons extra-virgin olive oil
1 1/4 cups ketchup, preferably organic Heinz
2 teaspoons sriracha (see Pantry, page 253)
