Steps:
- Place fennel seeds (if using) on a cutting board and break them by cutting once or twice with a large, heavy knife.
- Or if you have a mortar and pestle, give them a couple of grinds to lightly crush and release the aroma.
- In a small bowl, mix crushed fennel seeds, cumin, cinnamon and cayenne; set aside.
- In a large nonstick frypan, heat oil over medium high heat.
- Brown chicken with onion and garlic about 5 minutes.
- Stir in fennel mixture and sauté 1 minute.
- Add broth, zucchini, carrots, raisins and salt; bring to a boil.
- Cover and simmer over low heat stirring once, 5 minutes or until veggies are tender.
- Dissolve cornstarch in 1 tablespoon water, stir cornstarch mixture into pan and cook until thickened.
- Serve over prepared couscous or rice and garnish with chopped coriander.

- In a large bowl, combine chicken and egg. Add the saltines, almonds and salt; toss well. , In a large skillet over medium heat, cook and stir chicken mixture in butter for 10 minutes, stirring occasionally. Add vegetables; saute for 2-3 minutes or until vegetables are crisp-tender. Remove from the heat and set aside. , In a large saucepan, combine sugar and cornstarch; stir in the water, juices and soy sauce until smooth. I call this "Everyday Chicken" because it uses ingredients normally on-hand, can be modified to use what you do have, tastes wonderful, goes with anything, and is easy. Either marinate for a couple hours, or overnight and just pop in the oven for about an hour. Or, grill for a delicious, light chicken entree. Prep time includes marinating.

- In a large glass bowl (or other non-reactive material) mix onion, garlic, lemon juice, olive oil, white wine, Worcestershire sauce, Tabasco sauce, pepper, celery seed, and salt.
- Marinate chicken in this mixture at least 2 hours (but if you have time, preferably overnight).
- Bake covered at 350 degrees for 30 minutes; then uncover and bake another 30 minutes or until chicken is done (no pink, with clear juices).

BRAISED CHICKEN WITH LEMON AND OLIVES

- Pat chicken thighs dry with paper towels. Season well with salt and pepper and place in an earthenware baking dish in one layer, skin side up. Sprinkle with red pepper, garlic, fennel and rosemary and drizzle with olive oil. Rub seasoning into thighs on all sides. Tuck lemon wedges here and there. Let marinate for 15 minutes. Heat oven to 375 degrees.
- Put baking dish in oven, uncovered, and roast until skin browns lightly, about 20 minutes. Scatter olives evenly over chicken and add broth. Cover tightly and bake for 1 hour, until meat is very tender when probed with a skewer.
- Remove thighs and lemon wedges and arrange on a platter. Keep warm. Pour pan juices into a saucepan and quickly skim fat from surface. Over high heat, simmer rapidly until reduced by half. Spoon juices over chicken, sprinkle with parsley and serve.

- One: Wash the chicken and pat dry. Put the chicken pieces in a large non reactive glass or stainless steel bowl. Stir the garlic into the buttermilk or yogurt. Pour it over the chicken and turn until coated and submerged in the liquid. Marinate for at least 30 minutes or up to an hour, refrigerated. Meanwhile, combine the spices, herbs, and salt in a bowl and stir until they are evenly blended. Put the flour in a paper or large Zip-lock plastic bag and sprinkle the spice-herb mixture over it. Close the bag and shake until the seasoning is well-distributed.
- Two: If you plan to serve the chicken hot, preheat the oven to 150°F. Fit a wire cooling rack on a cookie sheet and set aside. Fill a Dutch oven or deep-fat fryer with enough lard or oil to come halfway up the sides. Over medium-high heat, bring the fat to 375°E (hot but not smoking).
- Three: Beginning with the dark meat, lift the chicken pieces out of the marinade one at a time, allowing the excess to flow back into the bowl, and drop them into the bag with the seasoned flour. Close the bag and shake until the chicken is well coated. Lift out of the flour, shake off the excess, and slip enough of pieces into the fat to fill the pan or fryer without crowding it. Deep-fry until the outside is a rich brown and the chicken is tender, maintaining the temperature at 365°F about 15 to 20 minutes, turning the chicken once, if necessary.
- Four: Remove the pieces as they are done, drain well, and place on the wire rack set in a cookie sheet. If you want to serve it hot, keep the finished chicken in the warm oven while you fry the second batch.

- Sprinkle chicken pieces with salt, pepper, and flour. Heat olive oil in heavy large pot over medium-high heat. Add half of chicken pieces to pot and cook until browned on all sides, turning occasionally, about 15 minutes. Transfer chicken to baking sheet or platter; repeat with remaining chicken. Pour off all but 2 tablespoons fat from pot and discard. Reduce heat to medium. Add shallots to pot; sauté until golden, about 6 minutes. Add cinnamon sticks, ginger, cumin, turmeric, and cayenne. Stir until fragrant, about 1 minute. Increase heat to high; add broth and 3 tablespoons lemon juice. Reduce heat to medium-low, cover, and simmer until juices run clear when thickest part of drumstick is pierced with knife, about 25 minutes.

- Preheat oven to 350°F Season chicken inside and out with salt and pepper. In a large ovensafe saucepan or Dutch oven, heat oil on medium-high. Add chicken and brown, breast side down, 5-10 minutes. Turn over and brown second side. Transfer chicken to a platter. Add celery and onion and sauté 5 minutes. Add carrots and sauté another 5 minutes. Remove pot from heat.
- Place chicken, breast side down, overtop vegetables . Combine broth, water and vinegar and pour over chicken. Add potatoes to the pot, cover and braise 45 minutes. Turn chicken, breasts side up, cook another 10-15 minutes with lid off to brown.
- Remove chicken and vegetables from pan and keep warm. Skim fat from cooking liquid and discard. Carve chicken and place slices into shallow bowls, adding vegetables and broth. Garnish with fresh chives and serve.
