QUICK & EASY BEEF STROGANOFF
This is a quick version of the old time favorite. Its a great way to use up the leftover steak, tri-tip, roast, etc. This is a regular at our house! (I guessed at the 1 1/2 oz of brown gravy mix, I did not have one on hand to get the exact weight - just use a standard pkg)

Steps:
- Saute the beef and the onion in 2 T of butter.
- There will be alot of"juice" in the pan so I turn up the heat for a couple of minutes to reduce the liquid.
- (Start your rice or your noodles at this point).
- Add the brown gravy mix to the water and stir to dissolve.
- Add gravy mixture to meat and stir constantly until thick.
- If you are in a hurry, you can add the sour cream at this point and be done with it or you can simmer the meat and gravy until your noodles or rice are done, then add the sour cream right before serving.
- Serve over rice or noodles.
- Makes 4 large servings.
- (If you like red wine, you can add 1/2 cup of red wine and 1 cup of water for the liquid).
- (You can also add mushrooms if desired).

- In a large skillet brown beef in oil over medium high heat. When meat is browned, drain excess fat from skillet. Add garlic powder, salt and pepper and stir in.
- Add bouillon, onion and mushrooms to skillet and saute until onions are translucent. Remove from heat (very important) and add sour cream. Stir all together and serve over hot cooked egg noodles.

- Season beef with salt, pepper, and Spanish paprika.
- Melt butter in a large skillet over medium heat. Saute onions and mushrooms in melted butter until onions are tender, 5 to 7 minutes; transfer to a bowl, retaining some of the butter in the skillet.
- Cook and stir beef in retained butter until lightly browned, 5 to 7 minutes.
- Stir 2/3 cup beef broth, white wine, garlic, and ketchup into the beef mixture; season with salt and pepper. Place a cover on the skillet and cook mixture at a simmer for 15 minutes.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain.
- Whisk remaining beef broth and flour together in a bowl; add to beef mixture. Bring the mixture to a boil, stirring continually, and boil for 1 minute. Reduce heat to low, add sour cream, and stir until smoothly incorporated. Ladle over egg noodles and garnish with paprika.

This is a fairly lean version of beef stroganoff, as most recipes call for more cream. This is something you can easily adjust to your tastes. I like a little thicker version, with just enough sauce to coat the meat and noodles.

- Season beef generously with salt and pepper.
- Heat oil in a large skillet over high heat until nearly smoking. Stir in beef; cook, stirring constantly, for 6-7 minutes, until liquid evaporates and meat browns. Remove meat from the pan and set aside.
- Stir butter, mushrooms and onions into the pan; cook and stir over medium heat until the vegetables are lightly browned. Add garlic and stir for 30 seconds. Stir in flour; cook for 1-2 minutes until incorporated.
- Stir in wine and 1 cup of stock, scraping the bottom of the pan to release any browned bits. Bring to a simmer, cook for 3-4 minutes, until the sauce thickens.
- Return beef to the pan. Stir in remaining cup of stock; bring to a simmer and cook on low heat for about 1 hour with the lid on, until the beef is tender and the sauce is thick. Stir every 20 minutes.
- Stir in creme fraiche. Stir in chives. Season with salt and pepper to taste.

- Dissolve bouillon in the boiling water in a large bowl; pour a portion of the broth into another pot for boiling the noodles.
- Bring the broth in the pot to a boil and add onion powder, dried onion, and garlic powder. Add egg noodles; bring back to a boil. Cook until tender yet firm to the bite, about 12 minutes. Drain. Stir in frozen peas and cover.
- Melt butter in a saucepan over medium-high heat. Saute onions until translucent, about 5 minutes. Add ground beef; cook and stir until no longer pink, 5 to 7 minutes. QUICK BEEF STROGANOFF
This is really fast to make for hungry adults who don't want pizza and are ready to eat in 20 minutes. If serving with rice, start the rice cooking first! It's perfect for before you all go out or right after the kids have gone to bed and you are all hungry. But never boil it at the end! I once had this all ready to serve when my sister's boyfriend went over & turned up the heat 'cause he was hungry and it all separated out! It's really that quick.It still tasted good, but he didn't like the way it looked. Next time we put him in charge of cooking the rice ; )

- Place flour, salt, and pepper in a gallon sized zip-lock bag. Add the beef and toss until all pieces are well-coated.

- Add Knob of butter and Olive Oil to a pan. Add onions and saute for 5 minutes until softened. Add garlic cloves and sage and cook until softened.
- Add red wine and paprika and reduce slightly. Add frozen mushrooms now. Add white pepper and salt.

- Place the flour and paprika in a medium sized bowl, and season with salt and pepper. Slice the steak into finger sized pieces, and then coat them in the flour all over.
- Heat the oil in a large frying pan or wok, and fry the white onion until translucent (5 mins) then add the floured steak slices to the onions, and fry for a further five to seven minutes (you may need to add a little more oil), don't worry about bits sticking to the frying pan, they will loosen those up later. NOTE: If you like your meat well cooked cook for ten minutes .
- Add the mushrooms and the red pepper slices and fry for a further few minutes.
- Prepare the beef stock and add water to about 250 ml, and then add to the steak and vegetables, add the white wine vinegar, check the seasoning and leave to cook on a low heat for a further 20 mins .
- Finally add the soured cream, and stir into the stroganoff to taste. If you overdo the vinegar, just add a little brown sugar to neutralise.
- Serve with roast potatoes and enjoy
