QUICK AND EASY PANCAKES

Golden little pancakes best served warm with your favourite toppings. They come out slightly thinner than typical pancakes; if you'd like them fluffy and thick, increase the flour and baking powder. A middle ground between crepes and pancakes; if you don't use any baking powder, they come out very similarly to crepes and you can use them as wraps for your favorite toppings, or with the baking powder, they're great as traditional flapjacks. Every pancake/waffle lover should have this recipe. If used for waffles, use 2 eggs, 6 tsp sugar, 1 1/3 cups milk, 1 1/3 cups flour, and 3/4 tsp of baking soda 2 1/4 tsp baking powder. Fast, and with only six ingredients, breakfast only gets so much easier. This is my adaptation of various recipes plus my own influence. We had a family recipe for 15 years, but this trumped even that! Hope you enjoy!

Steps:

  • In a bowl or mixing jug, whisk together egg, sugar and half of milk (2/3 cup).
  • Add the flour and mix throughly.
  • Then add remaining milk (2/3 cup) and baking powder. It should be the consistency of thick cream.
  • (Optional): Add 1-1/2 tsp oil if you have trouble with sticking.
  • Beat until smooth.
  • Pour about a soup spoon sized amount onto a pre-heated lightly greased frying pan or griddle (You will need to start about medium high heat but after a few rounds you will need to drop it back to medium).
  • Flip with a spatula when the top is all bubbly (should be a lovely golden colour), and cook the other side (~45 seconds/side depending on stovetop).
  • Remove from pan and pile up on a plate (cover with a paper towel until served).
  • Serve with whatever you like and enjoy.

1 large egg
5 teaspoons sugar
1 1/3 cups milk
1 cup flour
3/4 teaspoon baking powder
1 1/2 tablespoons vegetable oil (optional)

Perfect Pancakes (and Toppings!) image

Steps:

  • Pancake bar toppings: mini chocolate chips, fresh blueberries, flavored yogurt, sliced bananas and extra pats of butter
  • Mix together the cake flour, baking powder, sugar and salt in a large bowl. Mix together the milk, vanilla and eggs in a separate bowl. Add the wet ingredients to the dry ingredients, stirring very gently until just combined. Melt the butter and add it to the batter, stirring gently to combine. Stir in more milk if needed for thinning; the batter should not be overly thick.
  • Set a griddle over medium-low heat and butter the surface when it's hot. Use a 1/4-cup measure to drop the batter onto the griddle in batches. Fry the pancakes on both sides until golden, about 2 minutes per side.
  • Serve with an assortment of your favorite pancake toppings, such as mini chocolate chips, fresh blueberries, flavored yogurt, sliced bananas and extra pats of butter.

3 cups plus 2 tablespoons cake flour
3 tablespoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
3 cups milk, plus more if needed for thinning
3 teaspoons vanilla
2 large eggs
4 tablespoons unsalted butter, plus more for buttering the griddle

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, beat the eggs and then whisk in the milk and vanilla.
  • Melt the butter in a large cast iron skillet or griddle over medium heat.
  • Whisk the butter into the milk mixture. Add the wet ingredients to the flour mixture, and whisk until a thick batter is just formed.
  • Keeping the skillet at medium heat, ladle about 1/4 cup of the batter onto the skillet, to make a pancake. Make 1 or 2 more pancakes, taking care to keep them evenly spaced apart. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Serve immediately or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.
  • Procedure for adding fruit to pancakes: Once the bubbles break the surface of the pancakes, scatter the surface with sliced or diced fruit, or chocolate chips, nuts, etc. Flip with a spatula and cook for 1 minute more, being careful not to burn toppings.

Steps:

  • Heat griddle to 375 degrees or griddle pan over medium-high heat. Whisk flour, baking powder, salt, and sugar in bowl. Add egg, milk, and 2 tablespoons butter; whisk to combine. Batter should have small to medium lumps.
  • Heat oven to 175 degrees. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using pastry brush, brush remaining 1/2 teaspoon butter onto griddle. Wipe off excess.
  • Using a 2-ounce ladle, about 1/4 cup, pour pancake batter in pools two inches away from each other. When pancakes have bubbles on top and are slightly dry around the edges, 2 1/2 minutes, flip over. Cook until golden on bottom, 1 minute.
  • Repeat with remaining batter, keeping finished pancakes on heat-proof plate in oven.

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg, lightly beaten
1 cup milk
2 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle

  • Maple Syrup. I don’t know about you, but with pancake toppings, nothing stacks up to classic maple syrup. You can’t go wrong by drizzling this sweet and sticky syrup all over those warm cakes!
  • Fresh Fruit. Want a refreshing topping for hot pancakes? How about some fresh fruit? The keyword here is fresh. The freshest, ripest fruits will elevate your pancakes to new heights!
  • Whipped Cream. I have another classic topping up next: whipped cream. Mildly sweet and super creamy, it’s the perfect addition to your fluffy flapjacks.
  • Fresh Berries. Whether it’s strawberries, blueberries, cranberries, blackberries, or raspberries – berries are the ultimate pancake topping. Berries make pancakes even more fabulous than they already are!
  • Bananas and Chocolate Chips. We already know that bananas make a wonderful pancake topping. Not only do they add sweetness to the dish, but they’re packed with potassium and protein, too.
  • Nutella. Now, this one’s a no-brainer! Sweet, creamy, and hazelnutty, Nutella is one of the easiest ways to elevate your pancakes. Spreading it all over your cakes will make the most stunningly sweet breakfast-dessert!
  • Blueberry Sauce. Got a hankering for blueberry pancakes, but all you have is frozen blueberries? Well, then make the next best thing: a blueberry sauce.
  • Nuts. Add a crunch to your tender pancakes with some nuts. Whether it’s cashews, almonds, walnuts, hazelnuts, macadamias, or pecans, nuts taste great with pancakes, so pick your favorite!
  • Ice Cream. Pancakes and ice cream: it’s every kid’s dream! Apart from the flavor and pop of color, ice cream also provides a contrast in temperature, giving you that perfect balance of hot and cold.
  • Fruit Compote. Want fruit and syrup on your pancakes? Well, I suggest a fruit compote! Sure, fresh fruits on flapjacks are always great, but sometimes they can be too tart.
