LAZY LASAGNA WITH MEAT
This recipe is so easy, but so good! I changed up the original recipe, adding meat, and extra Parmesan cheese, and extra sauce. Everyone just loves it! Nice, served with a fresh dinner salad, and crusty bread. I hope you give it a try :)

Steps:
- In a skillet, brown and break Italian sausage into small pieces. Drain well, and set aside.
- Preheat oven to 350 degrees. Grease a 9 x 13 baking dish.
- Spread 1/3 of pasta sauce on the bottom of the dish. Now make a layer of ravioli on bottom, next spread all the spinach. Top with all the Italian sausage, 1/2 of the mozzarella, and 1/2 of the Parmesan.
- Top with 1/3 of pasta sauce, and cover with another layer of ravioli.
- Add remaining sauce and cheeses. Cover with foil, and bake for 25 minutes.
- Uncover and bake for 5 to 10 minutes more, to lightly brown. Enjoy!!

- Heat a large pot over medium-low heat. Once hot, add oil (or water) and garlic. Sauté briefly for 1 minute, stirring frequently, until barely golden brown. Then add tomatoes, oregano, coconut sugar, salt, and pepper flake.
- Bring to a simmer over medium heat. Then reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally. Then add basil and stir. Cook for 5 minutes more.
- Taste and adjust flavor as needed, adding more salt for saltiness, oregano or basil for freshness/herbed flavor, pepper flake for heat, or coconut sugar for sweetness. At this time, you can also choose to add nutritional yeast and/or tomato paste for more depth of flavor and richness (optional, but I usually add both).
- If the sauce has thickened too much at this point, thin with a little water. Although I prefer mine thicker and leave it on the thick/chunky side.

- In a large saucepan, heat the olive oil over medium-low heat. Add the shallot, garlic, and oregano and gently sauté, stirring occasionally, until soft and translucent, 3 to 5 minutes. Pour in the tomato puree, kosher salt, and freshly ground black pepper. Bring to a bubble, then reduce the heat and maintain a low simmer for 20 minutes, stirring occasionally. Stir in cashew cream and capers, and simmer for another 5 minutes.
- Boil the pasta in plenty of salted water according to the package instructions. Using a slotted spoon or tongs, slowly transfer the hot pasta to the tomato sauce, tossing to coat. Serve hot, garnished with torn or sliced basil leaves, a drizzle of olive oil (required: this is an important component for achieving the creamy, rich flavor), and an additional pinch salt (if necessary).
