Steps:
- Brown ground beef with onion in skillet, stirring until ground beef is crumbly; drain.
- Stir in corn, green pepper, soup, water, chili powder, and salt.
- Simmer for 15-20 minutes.
- Pour into 2 1/2 quart baking dish.
- Combine cornmeal mix, egg and oil in bowl; mix well.
- Spoon over casserole.
- Bake at 350 degrees or until topping is brown.
B & O CORNBREAD PIE
This recipe is taken from "What's Cooking on the B & O", a pamphlet of recipes from the railroad published many, many years ago. The B & O says some passengers have missed their stops in order to have second helpings of this dish. The B & O says one of their most popular dishes with both men and women.

Steps:
- Brown the beef and onion in a skillet. Add the soup, water, seasonings, corn, and green pepper. Mix well and allow to simmer for 15 minutes. Then fill either a greased large pie pan or a greased casserole dish 3/4 full, leaving room for the topping. Now prepare the topping. Sift together all of the topping ingredients except the egg, then add the egg and the milk. Cover the meat mixture with the topping mixture and bake in a preheated 350 degree F oven for 18 to 20 minutes. Don't be surprised when the topping disappears into the meat mixture; it will rise during the baking and form a good layer of corn bread.

- Bring water to a boil in a saucepan; add fennel, cloves, and cardamom. Continue boiling water for 3 minutes.
- Stir milk into the water and return mixture to a low boil; add tea bags, reduce heat to low, and boil until the tea has a strong, but not bitter flavor, 2 to 3 minutes.
- Strain tea into 4 tea mugs; sweeten with sugar to individual tastes.

CANTALOUPE PIE ALA TEXAS AND PACIFIC

This pie was a signature dessert in their first class dining car. DH and I are avid railfans and his huge collection of models and memorabilia is all T&P badged. The original, ornate station in south Fort Worth was recently refurbished and sold as loft condominiums http://www.texasandpacificlofts.com - This has nothing to do with the recipe of course but is where we dream of living someday (after everyone else moves out and we have the whole building to ourselves, of course ;-)). Steps:
- Slice cantaloupe in half, deseed and remove rind, reserving all juices. Cut into small pieces and push through a ricer.
- Place melon with juice and water into a saucepan and bring to a boil. Simmer for 5 minutes, stirring often.
- Mix sugar and flour and slowly add to hot mixture, stirring constantly.
- Add butter and nutmeg, stir until butter melts.
- Cool and pour into prebaked pie crust.
- If desired, top with meringue made according to your favorite recipe and brown in oven.
