Raisin Brioche Pastries (Pains aux Raisins) image

Steps:

  • Make brioche dough the day before making pastry and chill.
  • Just before making pastry cream, soak raisins in boiling-hot water until softened, about 10 minutes. Drain, pressing out excess liquid, and cool to room temperature.
  • Make pastry cream:
  • Bring milk to a simmer in a 1 1/2-quart heavy saucepan. Whisk together yolks, sugar, and cornstarch in a bowl and gradually whisk in hot milk. Return mixture to pan and cook over moderately low heat, stirring with a wooden spoon, until mixture begins to boil. Simmer, stirring, until thickened and smooth, about 3 minutes.
  • Transfer to a clean bowl and stir in vanilla and butter. Cover surface with plastic wrap and cool to room temperature.
  • Make pastries:
  • Roll out brioche dough on a well-floured surface into an 18- by 11-inch rectangle with a short side toward you. Spread pastry cream evenly over dough, leaving a 1/2-inch border at top edge. Sprinkle raisins evenly over cream. Roll up dough, starting from bottom, to make a log 11 inches long and about 3 1/2 inches in diameter. Moisten top edge with water and press to seal closed.
  • Transfer to a cutting board or baking sheet and cover loosely with plastic wrap.
  • Chill until firm, about 1 hour.
  • Cut chilled log into 11 (1-inch-thick) rounds and arrange about 2 inches apart on 2 buttered baking sheets.
  • Let pastries rise in a warm place, uncovered, 1 hour. (They will increase slightly in size and feel very tender to the touch.)
  • While pastries are rising, preheat oven to 425°F.
  • Bake in batches in middle of oven until tops are golden brown, 12 to 15 minutes. Transfer pastries to a rack.
  • Simmer preserves and water, stirring, 1 minute. Pour through a sieve into a bowl, pressing on solids. Brush glaze onto pastries.

  • Begin by combining lukewarm milk, 2 tablespoons flour (from the 260 g (2 cups + 2 tablespoons/ 9 oz)), 1 tablespoon sugar (from 2 tablespoons sugar) and yeast in a jar. Whisk well and let the mixture stand for 5 minutes. In the meantime combine the remaining flour, the remaining sugar, egg and salt in a large bowl. Pour over the yeast – sugar mixture. Start mixing, while adding the melted butter.
  • Knead the dough very well, until you see bubbles in the dough or until it’s no more sticking on the walls of the bowl. I normally knead my dough like this: If I’m kneading it with the hand mixer, I knead the dough for about 8 minutes at low speed and then for 5 minutes on medium high speed. With the kitchen machine I knead the dough for 7 minutes at low speed (speed 1, on Bosch kitchen machine) and for 3 more minutes at medium high speed (speed 3). With the hands, I knead the dough for about 10 to 12 minutes. If the dough is too sticky when kneading with your hands, just oil them with few drops of vegetable oil. If you’re using a heavy duty kitchen machine, please knead your dough for maximum 7 minutes in total. Otherwise you will be overworking the dough.
  • Using one hand, remove the dough from bowl and grease with 1 teaspoon sunflower oil. Put the dough back, turn in well so that it is completely covered with oil. Cover with cling film and then with kitchen towel. Let rise in a warm place for about 1 hour or until dough has doubled in size. After 1 hour remove the dough from the bowl and put it on a working surface. There is no need to dust it.
  • Gently flatten the dough with your hands. Since the dough is nicely kneaded, it doesn't stick. Therefore extra flour for dusting is not needed here. Put the raisins in the middle of the flattened dough and carefully press them into the dough and then fold. Then shape it into a long baguette form. You want to retain the air bubbles in the dough intact so that you’ll have nicely fluffy buns. Cut the baguette roll into approximately 8 equal rolls. Cut the roll in the middle first, it makes it easier to cut the rest of the rolls. Form the rolls into buns and put them on a baking sheet lined with a parchment paper. Cover and let raise for another 30 minutes.

  • Oatmeal Raisin Cookies. Thick, soft, and very tempting, these cookies are devilishly addictive. They’re just the right amount of crunchy and chewy, with plenty of plump raisins and healthy oats.
  • Applesauce Cake. All experienced bakers know that applesauce can be a cake-saver. Adding a spoonful to your batter keeps it beautifully moist as it bakes.
  • Apple Rum Raisin Bread Pudding. Comfort food doesn’t get much better than this hearty pudding. It’s made with rum-soaked raisins for a boozy kick, so now’s the time to use up that bottle your neighbor brought over last Christmas.
  • Rice Pudding. One of my all-time childhood favorites, rice pudding is a bowlful of sweet nostalgia. Everyone has their own interpretation of this common dish, but give this recipe a try and maybe you’ll find a new favorite.
  • Carrot Pudding. Carrot is a great choice if you’re looking to sneak some healthy ingredients into your kids’ treats. They won’t know or care that there are vegetables in this festive pudding.
  • Scones. Every cook should have a good scone recipe up their sleeve, and this easy recipe is a great place to start. It may be a basic recipe, but these fluffy baked goods are anything but basic.
  • Stollen. If you’ve ever been to Germany around Christmas, you’ve probably seen stollen at one of their legendary holiday markets. This is a soft loaf, flavored with candied zest, sliced almonds, rum-soaked raisins, and dried cranberries.
  • Cinnamon Raisin Muffins. Perfect for breakfast, these chunky muffins are sweet without being sickly and packed with energy-boosting raisins. Buttery, soft, and sprinkled with cinnamon sugar, these are a lunch box favorite and brunch must-have.
  • Lady Baltimore Cake. Lady Baltimore cake is a unique dessert with a unique name. This dish originates from the southern states, with some foodie historians claiming it was first served in the early 20th century.
  • Cinnamon-Raisin Rugelach. Rugelach is a traditional Jewish cookie, popular in Israel, Poland, and Jewish communities around the world. But you don’t have to wait for the seder feast to enjoy these delightful baked goodies.
