  • Place water and raisins in a small saucepan, and bring to boil. Boil 3 to 4 minutes. Set aside to cool.
  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
  • In a large bowl, cream together shortening and sugar. Beat in eggs and vanilla. Stir in raisins along with the liquid in which they were boiled. Blend in flour mixture, then mix in the walnuts. Drop by tablespoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in preheated oven, or until firm. Remove from cookie sheets to cool on wire racks.

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Melt butter over low heat and mix into the Basic Cookie Mix. Lightly beat egg and stir into mixture. Add vanilla and raisins and mix well.
  • With lightly floured hands shape into 1 inch balls and arrange about 2 inches apart on a greased cookie sheet.
  • Bake for 12 to 15 minutes until golden. Cool a couple of minutes before removing from cookie sheet to racks to complete cooling.

  • In a mixing bowl, mix flour, salt, and baking soda.
  • Put shortening into medium sized bowl.
  • Using electric beater, beat in brown and white sugars.

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking trays with baking parchment. Pour 50ml/2fl oz boiling water over the raisins and leave to soak for 20 mins until plump. Drain, reserving the liquid.
  • Meanwhile, in a large bowl, mix together the oil and sugar. Gradually beat in the egg, along with the reserved water from the raisins, the cinnamon and vanilla extract. Sift the flour, bicarbonate of soda and a pinch of salt into the bowl, then add the oats. Finally, mix in the raisins.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk 3 1/2 cups flour, 1 cup sugar, cream of tartar, and baking soda together in a bowl. Mix vegetable shortening, milk, egg, and vanilla extract into dry ingredients to make a dough.   • Roll out a portion of the dough to 1/8-inch thickness and cut into rounds with a biscuit cutter.
  • Place a teaspoonful of filling on the center of a round, then cover with another round and press edges together.
  • Bake at 350 degrees F until golden brown (10 to 15 minutes).

This is a family favorite that I have been making for years. It's the most requested oatmeal cookie recipe I've ever made. I found it somewhere years ago, but have lost the source. The secret is soaking the raisins which makes all the difference.

  • This is a very important first step that makes the cookie: combine eggs, raisins and vanilla and let stand for one hour.
  • Cream together butter and sugars.
  • Add flour, salt, cinnamon and soda and mix well.
  • Blend in egg-raisin mixture, oatmeal, and chopped nuts.
  • Dough will be stiff.
  • Drop by heaping teaspoons onto ungreased cookie sheet, or roll into balls and flatten slightly.
