RANCHO LA PUERTA'S FAMOUS GUACAMOLE RECIPE (MADE WITH PEAS!) image

Steps:

  • In a blender or in the bowl of a food processor, process the peas (or other green veggie of your choice) until smooth. In a medium bowl, mash the avocado with a fork or potato masher. Add the juice, tomato, onion, jalapeño, cilantro, garlic, salt, and black pepper. Add the peas and mix well. If the guacamole won't be served immediately, press a piece of plastic wrap directly onto the surface to prevent browning. The Ranch suggests if you're not using it to top tacos, serve with an assortment of raw vegetables and tostaditas.

1 cup frozen peas, slightly thawed (for variation, use 1 cup of well-cooked broccoli, edamame, or cooked asparagus tips)
1 medium Hass avocado, peeled and pitted
2 tablespoons fresh lime or lemon juice, or to taste

½ red or sweet onion, cut into ⅛-inch dice

  • Put the avocados into a mixing bowl and mash with a fork until chunky. Add the garlic, serrano, lime juice and cilantro and mix well until combined. Season with salt and pepper and serve immediately with tortilla chips.

From a package of frozen green peas. Use the best quality green peas you can find. I changed the ingredients around a little. For less heat, use a mild pepper such as Anaheim.

Steps:

  • Cook the frozen peas according to package directions. Drain and pat dry well to remove excess moisture.
  • Add the jalapeno pepper, olive oil, lemon juice to a blender and puree well. Next add the cooked green peas, salt, ground cumin and garlic.
  • Continue blending, scraping down sides of blender and mixture is smooth.
  • Transfer to serving bowl and stir in tomatoes, onion (and sour cream if desired for a smoother consistency). Taste and adjust seasoning; garnish with fresh cilantro sprigs.
  • Yield is estimated.

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, combine the oats, bran, wheat germ, almonds, cinnamon and cardamom.
  • In a saucepan over medium-low heat, combine the orange zest, lemon zest, honey, vegetable oil and apple juice. Simmer for 5 minutes. Remove from heat and pour over the dry ingredients, stirring well to combine. Spread the mixture in 1/2-inch layers on cookie sheets and bake about 40 minutes, or until toasted, stirring every 10 minutes. Remove from the oven, allow to cool and store in a tightly sealed container for up to a month.
