FRUITY CRUMBLE BARS
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, leaving 2 inches of excess paper on both ends.
- In a large mixing bowl, combine the whole-wheat flour, all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon and 1/2 cup of the rolled oats. Using a fork, cut the butter into the dry ingredients. Toss and crumble the mixture in between your fingers until bean-size crumbs are formed.
- In a small mixing bowl, whisk the vanilla, eggs and 1 tablespoon of the cane syrup. Slowly drizzle the egg mixture into the crumble mixture, using the fork to stir continuously. Check that the crumble holds its shape by squeezing some together in the palm of your hands. Spread three-quarters of the crumble mixture (about 7 cups) onto the lined baking sheet. Press the crumble down to make an even crust. Bake until light golden and set on the surface, 10 to 12 minutes.
- Meanwhile, add the almonds and remaining 1/2 cup rolled oats to the reserved crumble mixture. Set aside to use as the topping.
- Remove the crumble crust from the oven and cool for 1 minute. Using a small offset spatula, gently spread the cherry jelly over the crust. Sprinkle the dried apricots evenly over the jelly.
- In a medium mixing bowl, toss the peaches with the cornstarch and remaining 1 tablespoon cane syrup. Spoon the peaches in an even layer over the apricots and jelly. Sprinkle the remaining crumble mixture over the fruit.
- Bake until golden brown and fragrant, about 40 minutes. Cool completely before lifting the crumble out of the pan using the excess parchment as handles. Slice into 36 bars (2 inches by 1 inch). Store in an airtight container.
LEMON-RASPBERRY BARS

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
- In large bowl, mix Cookie Base ingredients with spoon until soft dough forms. Press into pan. Bake 14 to 16 minutes or until light golden brown. Sprinkle raspberries on crust. Lightly press raspberries into crust.
- In medium bowl, beat 3 eggs, granulated sugar and flour with whisk until well blended. Stir in 1 tablespoon lemon peel and the lemon juice. Pour evenly over raspberries on crust.
- Bake 18 to 22 minutes or until center is set. Cool completely, about 2 hours.
- When ready to serve, sprinkle top with powdered sugar. Cut into 6 rows by 4 rows. Cover and refrigerate any remaining bars.

This is a favorite finger food for Valentine's Day parties because it looks so festive. Here in snowy Maine, these bars are also fun to make on a "snow day" when our normal routine shifts to a vacation day.

- In a small bowl, combine 1/3 cup sugar, flour, butter and egg yolks. Press into a greased 13x9-in. baking pan. Bake at 350° for 15 minutes or until golden. Cool. Spread jam over crust; sprinkle with nuts., In a small bowl, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread meringue over nuts. , Bake at 350° for 25 minutes or until set and lightly browned. Cool on a wire rack. To cut into bars, use a knife dipped in hot water. Store in the refrigerator.

These tasty bars are a takeoff on my all-time favorite lemon bars. I found this recipe in the June, 1994 issue of Better Homes and Gardens.

- For the crust, beat butter with an electric mixer on medium speed for 30 seconds to soften.
- Add the 3/4 C powdered sugar.
- Beat until combined.
- Add the 2 cups flour; beat until combined.
- Press mixture onto the bottom of a greased 13x9-inch baking pan.
- Bake in a 350° oven for 20 minutes or till golden.
- Meanwhile, for filling, in a large mixing bowl, combine eggs, granulated sugar, lemon juice, orange zest, the 1/4 C flour, and baking powder.
- Beat for 2 minutes with an electric mixer till combined.
- Sprinkle berries over crust.
- Pour filling over berries, arranging berries evenly with a spoon.
- Bake in a 350° oven for 30-35 minutes or till light brown and filling is set.
- Cool thoroughly in the pan on a wire rack.
- Cut into bars.
- Just before serving, sprinkle with powdered sugar.
- To store, cover and chill for up to 2 days.
- Make-ahead tip: Place cut bars into a storage container or freezer bag and freeze for up to 3 months.
- Thaw, covered, in the refrigerator for 24 hours.

- Mix all dry ingredients.
- Cut in butter until crumbly.
- Place half of crumb mixture in a 13x9 pan.
- Bake 10 minutes, let cool.
- Return oven to 325°.

- Spread carefully over cooled crumbs.
- Sprinkle jam with remaining crumb mixture.
- Gently push crumbs into jam.

Steps:
- Preheat oven to 350°F (175°C).
- Spray an 8 x 8-inch-baking tray generously and lightly dust with flour.
- Mix together flour, sweetner, lemon zest and salt in a mixing bowl.
- Add butter and rub in between your fingertips until the mixture resembles breadcrumbs.
- Pour the mixture into the baking tray and press evenly over the base.
- Bake for 15 to 20 minutes or until lightly browned.
- Set aside to cool.
- Mix sweetner and flour in a large bowl.
- Add egg, lemon juice and zest and mix well.
- Spread rasperry jam evenly over warm crust.

LUSCIOUS LEMON-RASPBERRY BARS
Found this recipe on the box of the Betty Crocker Lemon Bars. The lemon bars by themselves are great, but add the raspberry preserves and you have a real treat. Lemon bar mix is not a recognized ingredient on this site, but that is what you'll need for the recipe. It can be found with the cake mixes in the grocery store.

- Heat oven to 350 degrees F whether using metal or glass pan.
- Stir filling mix, water and eggs using a fork (a few lumps will remain); set aside.
- Press Ready-Mixed Crust (dry) in bottom of 8 or 9" square pan. Bake 12 minutes.
- Drop cream cheese by spoonfuls onto hot crust and return pan to oven about 2 minutes to further soften cream cheese. Carefully spread cream cheese over crust. Stir filling mixture; pour over cream cheese.
- Bake 35 to 4 minutes or until top begins to brown and center is set.
- Cool 10 minutes.
- Spread preserves over top. Cool completely, about 1 hour.
- Sprinkle with powedered sugar.
- For 16 bars, cut into 4 rows by 4 rows. For ease in cutting, use sharp or wet knife.
- Store covered in refrigerator.
