- Combine the first nine ingredients; store in an airtight container. Yield: 2-1/2 cups coating mix (enough for 3 batches of chicken)., To prepare chicken: In a shallow bowl, beat eggs and milk. Place 3/4 cup coating mix in a large resealable plastic bag. Dip chicken into egg mixture, then add to the bag, a few pieces at a time; shake to coat. , Heat 1/4 in. of oil in a skillet over medium-high heat. Brown chicken on all sides; transfer to an ungreased 15x10x1-in. baking pan. , Bake, uncovered, at 350° for 45-55 minutes or until juices run clear.

I wanted a coating for skinless chicken so I tried several off-the-shelf products, and a few recipes, and decided to make one of my own. The chicken can be coated then frozen before cooking.

Steps:
- In the bowl of a food processor, mix bread crumbs, cornmeal, Parmesan cheese and Creole seasoning together. Pulse several times to blend thoroughly.
- Add diced butter to crumb mixture and pulse 6-8 times, or until crumb mixture is moistened. Place mixture in a shallow dish.
- Pat chicken pieces dry with paper towel. Smear yogurt on all sides (may substitute mayonnaise or creme fraiche).
- Dredge chicken in crumb mixture, turning to coat evenly.
- IF FREEZING: Place on a cookie sheet, with pieces not touching each other. Freeze. May be individually wrapped after frozen. To cook: unwrap frozen chicken, place in baking dish and bake (from frozen) according to directions that follow. An additional 10 minutes of cooking time may be necessary.
- TO COOK: Preheat oven to 375°F Lightly spray baking dish with cooking spray. Place coated pieces in baking dish. Cook 15 minutes then turn and continue cooking until done (approximately 10 more minutes).

I like this recipe much better than the store-bought coating mixes. You can double or triple the recipe if you wish, and store the unused amount in a sealed container. The cook time is for baking the chicken.

AMISH FRIED CHICKEN COATING
This recipe comes from an elderly Amish lady. It makes the best (oven baked) fried chicken you have ever tasted. This coating can also be used to fry delicious fish and pork chops. This recipe makes 9-1/2 cups of coating mix.

- Pour the oil halfway up the sides of a very large cast-iron skillet. Heat the oil to 350 degrees F.
- Line a rimmed baking sheet with parchment paper. Line a second rimmed baking sheet with a cooling rack. While the oil heats, combine the flour and House Seasoning in a shallow dish. Whisk together the milk and eggs in a separate shallow dish. Place the crushed cereal in a third shallow dish. Season the cereal with salt and pepper.
- Sprinkle the drumsticks with salt and pepper. Dip the chicken in the seasoned flour and coat completely. Dip in the egg mixture, then dredge in the rice cereal, pressing to coat evenly. Place on the parchment-lined baking sheet.
- Fry the chicken, in batches, in the hot oil until golden brown and an instant-read thermometer inserted in the thickest portion (avoiding bone) registers 165 degrees F, 18 to 20 minutes. Remove to the wire rack to drain.
- Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

- Heat oil in large skillet over medium high heat.
- Combine chicken pieces, egg, salt, pepper, and milk in large ziploc bag. Shake to combine, and set aside.
- In another large ziplock bag (or a plastic grocery sack with no holes) combine cornmeal, flour, italian dressing mix, and cayenne pepper. Shake to combine.
- 1-3 pieces at a time, remove chicken pieces from egg mix and place chicken pieces in the cormeal mix and shake to completely cover all chicken pieces. Take out coated chicken pieces, put into hot oil, and repeat process 3 at a time until all pieces have been coated.
- Fry chicken pieces turning once each side is browned until chicken is cooked through and juices run clear. Drain on paper towels.

- Toss together chicken pieces, black pepper, salt, paprika, rosemary, thyme, oregano, sage, white pepper, and cayenne in a large bowl to coat.

- Place chicken thighs and drumsticks into a bowl and pour buttermilk over chicken. Stir to coat. Cover and marinate in refrigerator for 3 hours (or up to overnight).
- Preheat oven to 425 degrees F (220 degrees C).
- Place flour, onion powder, garlic powder, seasoned salt, chicken bouillon granules, sage, black pepper, thyme, and marjoram into a 1-gallon resealable plastic bag. Close bag and shake to combine flour and seasonings. Whisk eggs and milk in a large bowl.
- Pour vegetable oil into a cast-iron skillet or an oven-safe glass or metal pan. Heat skillet with oil in the hot oven for 10 minutes.

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

- Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
- Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
- Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
- Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

- Place chicken drumsticks and thighs in a bowl and pour enough buttermilk over chicken to cover. Cover and refrigerate for 12 to 24 hours.
