CAPRESE PASTA SALAD
This easy Caprese pasta salad is always a favorite, especially when summer tomatoes are at their peak. It comes together quickly, but if you can make it ahead of time, the flavors seem to get better after it's chilled for a few hours. -Debby Harden, Lansing, Michigan

- Cook pasta according to package directions. Drain and rinse in cold water. Transfer to a large bowl. Gently stir in the tomatoes, cheese and basil., In a small bowl, whisk the remaining ingredients. Drizzle over salad and toss to coat. Refrigerate until serving.

I just found this on Recipegoldmine.com. Haven't made this yet, but they sound like an incredible appetizer for a cookout or picnic. Prep time includes 2 hour chilling time.

Steps:
- Cook pasta shells as directed on the package.
- Drain and cool.
- Place remaining ingredients except vinaigrette in a medium bowl.
- Pour vinaigrette over the salad, toss to coat.
- Stuff the shells with the salad.
- Cover and refrigerate 2 hours before serving.
PASTA WITH CHOPPED PESTO AND PEAS
This pesto doesn't call for a food processor, blender, or mortar and pestle - and it's better for it. Instead, all of the elements are chopped and mashed together by hand. (Pesto means "to pound, crush or smash" in Italian.) In Tuscany, this would be done with a half moon-shaped mezzaluna, but a chef's knife does the job, too. The result is a more textured mix with bright pops of flavor, like a sauce, herb salad and nut garnish in one. Basil and pine nuts are classic choices, but this version, "I Dream of Dinner (So You Don't Have To)," by Ali Slagle (Clarkson Potter, 2022), was guided by the pesto ratio in "Salt, Fat, Acid, Heat" by Samin Nosrat. It works with whatever soft herbs and nuts that you like and have on hand.

- Bring a large pot of salted water to a boil. In a small or medium skillet over medium, toast nuts, shaking the skillet occasionally until browned (try one to see), 4 to 6 minutes. Transfer to a cutting board to cool.
- As the nuts cool, into a large bowl, grate the Parmesan on the small holes of a box grater (or pulse chunks in a blender).
- Add the garlic clove and a pinch of salt to the pile of nuts and coarsely chop the nuts and garlic together. Add a handful of the herbs and another pinch of salt, and coarsely chop. (Opt for forceful, purposeful chops as opposed to soft, timid ones.) Toss and smash the mixture every few chops. Repeat with the remaining herbs, salting at each step, until a wet, coarse paste forms. Stir into the cheese, then stir in the olive oil. Season to taste with salt and pepper.
- Add the pasta to the boiling water and cook until al dente. In the last 3 minutes of cooking, add the peas to the pasta. Reserve 1 cup pasta water, then drain. Add the pasta and peas to the pesto and stir to combine. Add pasta water as needed to loosen the sauce. Season to taste with salt, pepper, more oil and more Parmesan.
CHOPPED SALAD APPETIZER SHELLS
This beautiful appetizer consists of an Italian chopped salad that is mounded into cooked pasta shells. It can be made up to four hours ahead and the romaine salad will remain crispy for serving. Note: To give proper credit, this is an adaptation of recipe #29329, which uses chicken as a main ingredient. In the version I am posting, the chicken is eliminated and the chopped salad is garnished with salami and feta cheese. I also make my own vinaigrette, but if you prefer, just use a bottled Italian dressing.

- Cook shells in plenty of boiling water according to package directions, being careful not to overcook them. Rinse in cold water; set aside. (For advance prep tip, see note at end).
- Chop all salad ingredients, making sure you have all the pieces quite small so that you can easily stuff the salad into the shells.
- Make dressing; pour over salad and toss lightly. Add salt and pepper if desired.
- Stuff salad into cooled shells (now you will understand why you chopped the ingredients into small pieces!).
- Refrigerate up to 4 hours before serving.
- Advance preparation tip from a reviewer: "The day before, I cooked the shells to al-dente, rinsed them in cool water, separated them and let them cool. Then, I put them in a ziplock. I chopped everything for the salad part and put it in a ziplock, without the dressingl. The next day, I mixed the dressing into the salad and stuffed the shells. Worked like a dream.".

- Put pasta water on first, top of lid so water boils quickly. Once pasta water is up to boil, salt the pasta water with about 1 teaspoon of salt. Boil pasta according to pasta box directions, drain pasta and rinse with cold water to stop the cooking process and set aside. Add broccoli florets to pasta water and cook 3 minutes, remove quickly and shock in bowl of ice cold water to stop the cooking process and set aside. Chop lettuces and soak for about 5 minutes in bowl of water to remove any remaining dirt. Lift lettuce out of bowl allowing any dirt to drop to the bottom, repeat this step if needed. Put lettuces and coleslaw in salad spinner and spin until dry, put lettuce in a large bowl and set aside. Slice tomatoes in half put in salad spinner, chop bell peppers and onions add to salad spinner. Slice ends off of cucumbers and discard. Slice cucumbers in half and with a teaspoon remove all the seeds out of the cucumbers. Slice cucumbers into strips and dice into small pieces. Add to salad spinner. Chop of the large end of the broccoli and cut florets into bit size pieces, add to salad spinner. Spin all the vegetables until dry and add to large salad bowl. Top salad with pasta, egg, and cheese. Add garlic powder, black pepper and creole seasonings. Pour rice wine vinegar and mix salad. Add olive oil and mix salad. Top with bacon if you like. Note: This is my base salad, sometimes I omit the pasta, sometimes I add chicken breast or shrimp. Please take this base salad and make it your own. If you don't like bacon (who doesn't) don't add it. Also, I serve this with extra salad dressing on the side. My baby girl does not like dressing she just loves the vinaigrette, I on the other hand likes to add ranch dressing to my salad.
