BASIC RED SAUCE (SALSA DE CHILE ROJO)
When you go out for Mexican food at your favorite little place, and your food's covered with that delicious red sauce, and you wish you could make it at home? Now you can! This is so simple to make! I found this recipe in one of my gazillion cookbooks. I decided to give it a try. I'd been using the same red sauce for years, and loved it, so I'm not sure why I even tried this one. But am I glad I did!!! lol This recipe is mild, so should you want yours more spicy, then you'll want to use the hotter dried chiles. Either way, I'm sure you will love it. Don't be afraid of the dried chiles if this is your first attempt. It really is simple to do, and the end result will be so worth it. Where I buy my dried chiles, actually it's Albertson's, there's a rack in the specialty aisle, and there are cellophane bags hanging up. Usually, the bags have the type of chile and how spicy hot it is. So, that should help you out some. If you can't find any, zmail me and I'll help you. This freezes well.

Steps:
- Soak chiles in warm water until softened, about 30 minutes. Drain; strain and reserve liquid. Remove stems and seeds and membranes from the chiles. Cook and stir onion and garlic in oil in a 2-qt. saucepan until onion is tender. Add chiles and 2 cups of the reserved liquid , the tomato sauce, oregano, cumin and salt. Simmer uncovered 20 minutes. Cool.
- Transfer to blender container; cover and blend on low speed until smooth. Strain. Refrigerate sauce no longer than 10 days.
- Note: I strain mine in a mesh strainer or colander. It takes a few minutes, but keep thinking of how great this is going to taste!

Steps:
- In a food processor, puree the tomatoes to a smooth creamy consistency.
- Add olive oil to a large pan over medium heat. Once hot, add the onions and saute until they are soft, and before it actually starts browning a bit, add the garlic. If you'd like to make the sauce spicier, add a pinch red pepper, optional.
- Add the tomatoes and season with salt and pepper.
- Simmer on a medium-low flame for about a half hour. Thrive for balance in the consistency of the sauce, it has to be fluid but it should not look overly wet. A few minutes before taking the sauce off the fire, add half the basil and season with salt and pepper.
- To serve: Cook a nice al dente pasta, dress with red sauce and finish with some freshly grated Parmesan, a couple of leaves of basil and sprinkle with extra-virgin olive oil.
EASY RED PASTA SAUCE
Plain, simple, no frills, basic red sauce that tastes great on a variety of pasta and is not watered down. For making a good sauce, use canned tomatoes. Except for the summer months, the 'fresh' tomatoes are usually harvested when green and left a long time to ripen. Add more red pepper flakes if you like your sauce spicy!

- In a medium saucepan over low heat, warm oil and saute garlic; heat through until the garlic turns translucent, not brown. Add onion and cook over low heat until translucent; 5 to 10 minutes.
- Add parsley, basil and ground black pepper; stir. Add tomatoes and cover; raise heat to medium and bring to a strong simmer. Lower heat and add red pepper flakes. Cover saucepan and cook for 25 to 35 minutes.
- The sauce can be run in the food processor for 2 to 3 seconds to achieve a more uniform sauce or let the sauce cook over medium-low heat uncovered for 10 minutes or until it thickens.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain and serve with sauce.

HOW TO MAKE THE PERFECT RED SAUCE
Recipe from Renzo Sciortino, owner of Renzo's in Boca Raton. This was found in a recent issue of Boca Magazine and this sauce is so popular, it is now being bottled and sold at Costco. Although he won't part with his exact recipe, this one comes close.

Steps:
- Pour the olive oil into a 12 inch skillet and heat on low heat. Add the diced onion and saute' until the onions are slightly golden. In the meantime, crush the canned tomatoes with your hands until smooth and then add them to the skillet. Cook 10 to 15 minutes. Salt and pepper to taste. Then chop the basil leaves and add them to the sauce. Add crushed pepper flakes if you want to make it more spicy, or eggplant or zucchini. I like to add about 4 cloves minced garlic in with the onion at the beginning for added flavor.

- Cocktail Sauce (United States) There are some who say that British chef Fanny Cradock created the original shrimp cocktail in 1967, but according to food historians, the concept of fresh seafood cooked, chilled and served with a spicy sauce originated in the United States sometime in the late 19th century.
- Enchilada Sauce (Mexico) Enchiladas are a dish made of corn tortillas rolled around a filling and covered with a spicy red sauce. They originated in Mexico, near the Yucatan in pre-Columbian days.
- Harissa (North Africa) Harissa—the word comes from the Arabic harasa, meaning “to pound” and that is exactly how the sauce/condiment is formed. Most food historians believe that chiles arrived in Africa when the Spanish occupied Tunisia in the early 16th century.
- Ketchup (Great Britain or China) In the barest of kitchens, even in the cupboard of Old Mother Hubbard, you are almost certain to find a bottle of ketchup.
- Marinara (Southern Italy) Questions, questions, so many questions. Marinara (the name itself refers to its origin) was born in southern Italy, near the sea (mar).
- Red Curry Paste (Thailand) Kristen and I have so much in common. She's a food blogger. She loves creating fresh-in-the-kitchen as opposed to from-a-jar-at-the-supermarket.
- Romesco (Spain) Catalonia, an autonomous community on the northeast tip of Spain, covers an area of nearly 12,400 square miles. The rugged Pyrenees rise to the north and beautiful Mediterranean beaches form the south and east borders.
- Salsa (Mexico) This combination of chilies, tomatoes, and other spices) can be traced to the Aztecs, Mayans, and Incas. It was “discovered” by Spanish explorers upon the conquest of Mexico in 1519-1521 but was made centuries before that with the Aztec domestication of the tomato.
- Sriracha (Vietnam) Sriracha might just be the world's coolest hot sauce. It's EVERYWHERE and seems almost as ubiquitous as ketchup. Less than two years ago the producer of the original Sriracha, Huy Fong Foods, sold 20 million bottles.
- Sweet Chili (Thailand) Sweet chili sauce (also known as Thai sweet chili sauce) is a popular condiment of red chile peppers, rice wine vinegar, fish sauce, garlic, and sugar.
