Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until tender, about 10 minutes. When the pasta is done, drain it, cool under cold water, drain again and pat dry.
  • Meanwhile, grill or broil the tuna 2 to 3 minutes a side only or until charred on the outside, but rare on the inside. (If you don't like tuna rare, substitute canned tuna which you don't cook.) When the tuna is done remove it to a plate for later.
  • In a large mixing bowl combine the olive oil, corn, peppers, red pepper flakes and optional mayonnaise. Toss the pasta with the olive oil, corn and peppers.
  • Portion out the pasta. Cut the tuna into thin diagonal strips and pile them in the center of the pasta; garnish with chives.

Salt
8 ounces penne
1 pound fresh tuna steak, about 3/4-inch thick
1/4 cup olive oil
1 package (10 ounces) frozen corn, thawed and patted dry
1 jar (6-7 ounces) roasted red peppers or fried sweet peppers with onions, chopped
1/4 to 1/2 teaspoon dried red pepper flakes
1/4 cup mayonnaise, optional
2 tablespoons snipped chives

COLD MACARONI AND TUNA SALAD

This is a simple and good recipe that is great served on those hot summer days and can even be prepared the night before so that it is ready and cold when you come home from work the next day. My husband never ate this until we got married and in the summer he requests it every other week. You can substitute chicken for the tuna and it is great that way also. I serve it on a leaf of lettuce, for looks, with an assortment of crackers. Happy eating!

TUNA & MACARONI SUMMER SALAD

With the warm summer months approaching; many of us will think about outdoor barbeques and get togethers. You certainly need something to go with those hotdogs and burgers. Macaroni salad is a popular side when serving hamburgers and hotdogs. I have taken the traditional macaroni salad recipe and I added a few new spices and ingredients so that you could even make a meal out of the macaroni itself.

COLD TUNA OR CHICKEN MACARONI SALAD

Even the most basic Macaroni Salad can be heavenly...until people start messing with the "formula" by doing vile things such as adding peas, cheese or worse still, Miracle Whip! I much prefer mayonnaise and assiduously leave out the peas and cheese...In addition I've lightened the original recipe a smidge with lower fat ingredients and whole wheat pasta...Serve over lettuce.
