RHUBARB CAKE/SQUARES - TWO SIZES

Is it a cake? Or are they squares? Guess it depends what size pieces you cut! Has a shortbread crust and crumble topping. Two sizes depending on how much rhubarb you have (be careful when reading the ingredient quantities for each to get the corresponding crust and filling). From my lovely mother-in-law.

Rhubarb Cake/Squares - Two Sizes image

Steps:

  • Mix the cake ingredients with fork.
  • Reserve 1 cup for the topping (1 1/2 cups for the 9x13 inch pan) and press the rest into the pan.
  • For the filling: cream butter.
  • Add sugar and beat until fluffy.
  • Add eggs and beat until creamy.
  • Fold in chopped rhubarb.
  • Pour the filling over the base.
  • Sprinkle reserved crumbs on top.
  • Sprinkle cinnamon and sugar on top.
  • Bake at 350 degrees for 45 minutes until done. Delicious hot or cold.
  • Note: if a recipe comes from a mother, it has no calories.

Steps:

  • Preheat oven to 350°. In a small bowl, mix flour, oats and brown sugar; cut in butter until crumbly. Reserve 1 cup mixture for topping. Press remaining mixture onto bottom of a greased 9-in. square baking pan., For filling, beat cream cheese, sugar, salt and spices until smooth. Add egg and vanilla; beat on low speed just until combined. Fold in rhubarb. Spread over crust. Sprinkle with topping., Bake until golden brown and filling is set, about 40 minutes. Cool on a wire rack 1 hour. Refrigerate, covered, until cold, about 2 hours. Cut into squares.

Five-Ingredient Rhubarb Squares image

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Reserve 2 tablespoons of the cake mix. In large bowl, cut butter into remaining cake mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. In bottom of ungreased 13x9-inch pan, pat 2 cups of the mixture. Reserve remaining crumbly mixture for topping. Bake 13 minutes.
  • In large bowl, beat reserved 2 tablespoons cake mix, the sugar and eggs with electric mixer on medium speed until creamy. Stir in rhubarb. Pour over partially baked crust. Sprinkle remaining crumbly mixture over top.
  • Bake 45 to 50 minutes longer or until golden brown and center is set. Cool slightly before serving. Serve warm or cold with whipped cream. Store covered in refrigerator.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan with cooking spray.
  • Combine flour, oats, brown sugar, and cinnamon in a bowl. Cut in butter until coarse and crumbly. Press into the bottom of the prepared pan to form a crust, reserving about 1/3 cup for topping.
  • Mix cream cheese, sugar, eggs, vanilla extract, vanilla butter and nut flavoring, and cinnamon together in a bowl until smooth. Stir in rhubarb. Pour filling on top of crust. Sprinkle with the reserved crumble.
  • Bake in the preheated oven until a toothpick or knife inserted into the center comes out clean, 45 to 50 minutes. Remove from the oven and let cool completely before cutting into squares.
