BONE-IN RIB-EYE WITH GREEN PEPPERCORN PAN SAUCE

- Preheat oven to 425 degrees F.
- Sprinkle the steaks with salt and pepper. Heat a large cast-iron pan over high heat. Add the oil. Sear the steaks on both sides until a nice crust form, about 3 minutes per side. Place the pan in the oven and cook until desired doneness is reached. When the steaks come out of the oven, take the steaks out of the cast-iron pan.
- Place the pan on medium heat. Add the shallots to the pan with the thyme. Using the rendered fat from the steaks that is still in the pan, saute until the shallots begin to caramelize, 7 to 10 minutes. Deglaze the pan with the cognac and take the thyme out. Add the beef demi in with the green peppercorns and Dijon. Bring to a simmer, and then add the cream, honey and 1 tablespoon salt. Stir and pour over the steaks.
RIBEYE SALAD W/ HONEY SOY PAN SAUCE
This salad is a nice change of pace...I've made it with strip steaks as well...The pan sauce blends so well with the lemon vinaigrette...Use your own choice of veggies and toppings...I use blue cheese crumbles, toasted cashews, artichokes and black olives, to name a few...The sauce can also be used on chicken, for a yummy chicken salad... Steps:
- In a small bowl, sprinkle a little seasoned salt, garlic powder and onion powder on sliced steak- mash it into the steak with your fingers.
- Over medium-high heat, in a medium skillet, heat olive oil. When pan is nice and hot, add steak. Leave it untouched for 2 minutes to get a nice sear on the side in pan. Turn steak to sear on the other side and cook another 2 minutes. Sear other two sides for 1 minute each. Add a few more minutes if you like your steak more well done.
- Mix your soy sauce and honey.
- Add the soy sauce, honey and butter. Make sure your pan is nice and hot still so they will cook down into the wonderful sweet and savory syrup you will drizzle on your salad... Cook glaze for for 1 minute, coating the steak with the sauce. Set aside to rest while you prepare your greens. If using cashews. toast them now.
- Mix your greens and veggies in a bowl...squeeze half a lemon and drizzle with 2 - 3 tablespoons extra virgin olive oil...salt and pepper to taste. Toss greens to combine.
- Divide the mixed greens between 2 plates. If using artichokes, olives...mushrooms, place then around the edge of the salad...
- Now, divide the steak strips between the salads. sprinkle with cheese crumbles, cashews. Now drizzle with the pan sauce, as much as you like. I served with slices of french bread baguette.
PERFECT SOY-GRILLED STEAK
You may think you don't have the time to marinate meat before grilling it, but it's time-consuming only if you think a marinade has to tenderize. As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.

- Start a charcoal or wood fire or heat a gas grill; the fire should be hot and the rack no more than 4 inches from the heat source. Mix together the first 6 ingredients; taste and add more of anything you like. Turn the steak in the sauce once or twice, then let sit in the sauce until the grill is hot.
- Turn the steak one more time, then place on the grill; spoon any remaining sauce over it. For rare meat, grill about 3 minutes a side for steaks less than an inch thick. For larger or more done steak, increase the time slightly.

- Pat steaks dry, then sprinkle with 3/4 teaspoon salt and 1/2 teaspoon pepper (total).
- Heat 1 tablespoon oil in a 12-inch heavy skillet over high heat until it shimmers, then sauté steaks in 2 batches, turning once, about 4 minutes per batch for medium-rare. Transfer to a large plate and cover with foil.
- Pour off fat from skillet, then sauté garlic in remaining tablespoon oil over medium-high heat until pale golden, about 30 seconds. Add wine and boil, stirring and scraping up brown bits, until reduced by half, 2 to 3 minutes. Add water, soy sauce, and any meat juices from plate and boil until reduced by half, 3 to 4 minutes.
- Reduce heat to medium-low and whisk in butter, 1 piece at a time, until slightly thickened. Stir in parsley and pour sauce over steaks.

- In a medium size mixing bowl, combine soy sauce, maple syrup, garlic, ginger root, mustard powder, sesame oil, and Tabasco sauce; mix well to blend. Now add beer, and stir lightly to mix.
- Prepare steaks by scoring any fatty outside areas on steak with a knife, (this prevents the steaks from curling when barbecuing). Place steaks in a casserole dish, and pour marinade over. Using a fork, punch holes in steaks so that the marinade penetrates into the steaks. Turn steaks over, and repeat punching holes.
- Cover with clear wrap or foil, and let marinate in the refrigerator for at least 1 hour or longer. You can also refrigerate and marinate overnight.
- Prepare and preheat barbecue to high heat. Place steaks directly on grill and sear one side for about 15 seconds. Turn steaks over and cook for about 5 minutes, then turn over and cook for another 5 minutes for medium-rare, depending on thickness. Test for doneness by cutting into the middle of the steak.
