RICE FLOUR CHICKEN (CRISP AND CRUNCHY BATTER)

I got this recipe while watching my Malaysian roommate cook years ago. Personally I like it best with smaller bits of chicken, great for taking to pot-luck dinners or picnics :) I didn't count the marinading time in the preparation time. Makes far more/less pieces depending on size of pieces used. NOTE: I forgot to make it clear in my instruction that this works best with either small chunks of chicken fillet or chicken wings, and suits pieces that will cook quickly above those that require a longer cooking time, I hope that this clarification helps :)

Rice Flour Chicken (Crisp and Crunchy Batter) image

Steps:

  • Make the soy sauce, honey, spice powder, garlic, onion and sesame oil into a marinade mixture.
  • Add the chicken pieces for at least 2 hours, but even better, overnight.
  • Mix batter ingredients with enough water to form a*thick* batter.
  • If not crunchy when fried add slightly more baking powder.
  • Dip marinaded chicken into batter and deep fry until cooked and golden brown.

1 -1 1/2 kg chicken piece
2 -3 tablespoons soy sauce
2 tablespoons honey
1 teaspoon five-spice powder
1 teaspoon crushed garlic
1 onion (chopped)
1 tablespoon sesame oil (optional)
2 cups rice flour
1 pinch salt
1 -2 tablespoon baking powder

Steps:

  • In a mixing bowl, lightly beat egg yolk and pour in ice water, slightly mix. Add the flour all at once, stroke a few times with a fork just until ingredients are loosely combined. The batter should be somewhat lumpy.
  • 4 servings
  • In a small saucepan over low-medium heat, combine mirin, soy sauce and sugar. Cook for 3 to 5 minutes until sugar dissolves. Transfer to a bowl, add grated radish and ginger just before serving.
  • Heat about 2 inches of vegetable oil to 375 degrees F in a wok or deep-fryer. Flavor with sesame oil. Dry the vegetables well. Dust shrimp and vegetables in flour to soak up remaining moisture, shake off excess. Dip the shrimp and vegetables into the batter one by one. Drop 6 pieces at a time in hot oil. Do not overcrowd the pan. Fry until golden brown, turning once, about 3 minutes. To keep the oil clean, skim the small bits of batter that float in the oil between batches. Remove the fried pieces from the oil and drain on a paper towel for a few seconds. Serve with dipping sauce.

1/2 cup Tamari soy sauce
1 teaspoon sugar
1/4 cup grated daikon radish
1 teaspoon ginger, grated
Vegetable oil, for frying
1 tablespoons sesame oil, for flavoring frying oil
1 cup flour, for dusting
1/2 pound large shrimp, cleaned, tails on
1/2 pound scallops
1 cup broccoli florets
1 sweet potato, peeled and sliced 1/4-inch thick
2 carrots, peeled and sliced diagonally in strips
4 ounces Chinese green beans, ends trimmed
4 ounces mushrooms
5 stalks asparagus, ends trimmed
1 red bell pepper, cut in strips
2 Japanese eggplants, halved and cut into 1/4-inch slices

Steps:

  • Stir together rice flour (or substitutions)and egg yolk. Add water and stir until smooth. Pour 1 qt corn oil into large skillet or wok to depth of 1/2", filling to no more than 1/3 full. Heat over medium heat to 375 degrees. Dip vegetables or chicken into batter a few at a time into the batter. Carefully add to the hot oil. Fry 2-3 minutes, turning once, until golden brown and crisp. Drain on paper towels.

1 cup rice flour
(substitute 3/4 cup corn starch and 1/4 cup all purpose flour and 1 t baking powder for the rice flour)
1/2 t salt
