Stuffed Bell Peppers image

Steps:

  • Combine rice and water in a small saucepan. Bring to a boil, reduce heat to low, and simmer for about 15 minutes.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Cut tops off peppers, seed insides, and arrange peppers in a large baking dish. Chop usable portion of the tops.
  • Heat oil in a large skillet over medium heat. Saute chopped peppers and onions in oil until soft. Stir in textured vegetable protein and parsley. Reduce heat to low, and continue cooking for 5 minutes. Mix in cooked rice and 1 1/5 cups tomato sauce. Season to taste with salt and pepper. Spoon the mixture into the peppers, and top each with remaining tomato sauce.
  • Cover, and bake about 45 minutes. Uncover, top each pepper with mozzarella cheese, and bake until cheese is melted.

Steps:

  • Preheat oven to 350 degrees.
  • Cut bell peppers in half and remove seeds.
  • In a large skillet, bring 2 cups of water to a boil. Add bell peppers, reduce heat to low and simmer until just tender, about 5 minutes. Remove from pan, drain and set aside to cool.
  • In a medium bowl, combine ricotta cheese, eggs, olives, walnuts, parsley, basil, lemon zest and black pepper. Mix well with a fork.
  • Mound into pepper halves.
  • Sprinkle with Parmesan cheese.
  • Place in an ovenproof baking dish and add water to 1/4 inch depth in dish to prevent burning.
  • Bake until heated through, about 20 to 30 minutes. Place under broiler briefly to brown.

Brown Rice Stuffed Peppers image

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut off the top 1/3 inch of each pepper, remove and discard the seeds. If needed, cut a small amount of the bottom off each pepper so that they sit flat. Season the insides evenly with 1/4 teaspoon salt. Nestle the peppers inside an 8-inch baking dish and set aside.
  • Heat a large skillet over medium-high heat. Add the oil and heat another minute. Add the plant-based meat and use the back of a wooden spoon to break apart the meat into small pieces. Cook, stirring occasionally, until the meat is browned, about 5 minutes. Add the shallots, fennel, oregano and 1 teaspoon salt and cook another 4 minutes or until fragrant and the vegetables begin to soften. Stir in the rice, tomatoes, spinach, Parmigiano-Reggiano cheese, basil and pepper and cook until the spinach is wilts and the cheese is melted. Divide the mixture among the peppers. Top with the Provolone piccante. Add 1/2 cup of water to the bottom of the pan. Bake the peppers for 40 minutes or until the cheese is melted and peppers are soft but not falling apart. Serve hot.

Steps:

  • Place an oven rack in the center of the oven and preheat to 350 degrees F. Spray a baking sheet with vegetable oil cooking spray and set aside.
  • In a medium skillet, heat the oil over medium-high heat. Add the pancetta and cook, stirring frequently, until brown and crispy, about 5 to 7 minutes. Using a slotted spoon, remove the pancetta and drain on paper towels. Add the onion to the pan and cook until translucent and soft, about 5 minutes. Set aside to cool for 10 minutes.
  • In a medium bowl, combine the onion, pancetta, cheeses, and peas. Season with salt and pepper, to taste.
  • Using a paring knife, cut 1/2-inch from the stem-end of the peppers. Remove the seeds and veins. Using a small dessert spoon, fill each pepper with the ricotta mixture. Place the filled peppers on the prepared baking sheet and bake for 15 to 18 minutes until the peppers begin to soften. Remove from the oven and cool for 10 minutes.

Steps:

  • Preheat oven to 350 degrees.
  • Slice off the stem end of peppers and reserve for another use.
  • Remove the seeds and membranes from the peppers and rinse peppers inside and out.
  • To parboil, use the microwave as follows.
  • Place 4 peppers at a time face down on a dinner plate, cover with a microwave cover and microwave on high for 3 minutes.
  • Repeat with remaining peppers.
  • Place peppers face up in a baking dish just large enough to accommodate all 12 peppers.
  • Meanwhile, brown ground beef in a large skillet with onion and garlic.
  • Drain off fat.
  • Add rice, half of tomato sauce, salt, and pepper; stir and heat until well combined.
  • Quickly stir in the cheese.
  • Fill each pepper with the beef mixture.
  • Pour the remaining tomato sauce evenly over the peppers and cover the baking dish tightly.
  • Bake for 45 minutes, then uncover and bake for an additional 15 minutes.
  • These may be frozen.

Perfect Stuffed Bell Peppers image

Steps:

  • Core and clean peppers and cook in hot water for approximately 5 minutes. Remove from water, stand upside down and drain.
  • Sprinkle inside with salt.
  • Brown beef and onions in hot oil. Add tomatoes, rice, Worcestershire sauce, salt and pepper. Simmer 5 minutes.
  • Stir in 1 cup cheese and stir until almost melted.
  • Stuff peppers and top with additional cheese.
  • Bake approximately 25 minutes in 350 oven.
  • Note: I usually add about 1/4 cup water to the baking dish just prior to put it in the oven. Also, if you think the whole pepper is to large, you can cut it in half and stuff them that way.
  • Note #2: My grandson doesn't like to find a "chunk" of tomato in his pepper -- so if he's going to be around for the meal (his favorite one), I'll put the stewed tomatoes in my food processor and give them a couple whirls just to break up any large pieces of tomato.

Classic Rice & Beef Stuffed Bell Peppers image

Steps:

  • Bring 4 quarts water to a boil in a large stockpot or Dutch oven over high heat.
  • Add 1 tablespoon salt and bell peppers.
  • Cook until peppers just begin to soften, about 3 minutes.
  • Using slotted spoon, remove peppers from pot, drain off excess water and place peppers cut side up on paper towels.
  • Return water to boil; add rice and boil until tender, about 13 minutes.
  • Drain rice and transfer to large bowl; set aside.
  • Adjust oven rack to middle position and heat oven to 350°F.
  • Meanwhile, heat 12 inch heavy bottomed skillet over medium high heat until hot, about 1 1/2 minutes; add oil and swirl to coat.
  • Add onion and cook, stirring occasionally, until softened and beginning to brown, about 5 minutes.
  • Add ground beef and cook, breaking beef into small pieces with spoon, until no longer pink, about 4 minutes.
  • Stir in garlic and cook until fragrant about 30 seconds.
