RITZ CRACKER CHICKEN CASSEROLE RECIPE
Ritz cracker chicken casserole recipe produces one tasty, creamy, and crunchy chicken breast entree!

Steps:
- Preheat oven to 350 degrees. Spray a 9x13" baking pan with non-stick cooking spray and set aside.
- In a large bowl, mix together soup, sour cream, cream cheese, onion powder, and salt and pepper.
- Mix in the frozen vegetables and chicken.
- Spread chicken mixture into the bottom of the prepared pan
- In a bowl, mix crushed cracker crumbs and melted butter together then sprinkle over the top of the chicken mixture.
- Bake uncovered for 30-35 minutes.
- Top with parsley, if desired.
- Store it in an airtight container to enjoy it the next day!

- Mix together the chicken, soup, sour cream, and cheese in a bowl. Pour the mixture into a baking pan and spread evenly. Add crushed Ritz crackers all over the top of the mixture. Melt butter completely; spoon over the top of the cracker crumbs. Bake in a 350° oven for about 35 minutes, or until casserole is heated through and the cracker topping is nice and crispy. Serve and hope your family/guests/loved ones don't devour it in one sitting =) Such a ridiculously simple recipe -- I can't believe I haven't made it sooner, but I have a feeling it will become a staple. This recipe came from my friend Amanda, who loved to cook for us when we were roommates in college. This is another simple and delicious recipe- definitely a great comfort food!

Steps:
- Mix sour cream and soup in a bowl, place inside the refrigerator.
- Boil chicken breasts until tender; drain and let stand 10 minutes or until cool enough to handle.
- Spread cubed chicken evenly over the bottom of a sprayed 9X13 casserole dish.
- Salt and pepper chicken to taste.
- Remove sour cream and soup mixture from refrigerator and spread over the chicken in the casserole dish.
- Crush Ritz crackers inside of its plastic sleeve and then spread evenly over the casserole.
- Spoon melted butter over the top of all.
- Bake at 350°F until golden brown and bubbling, approximately 20-30 minutes.
- Enjoy.

Steps:
- Put chicken into an ungreased casserole dish.
- Mix soup and sour cream very well, and then pour over the chicken. Put the crushed crackers on top of this and pour melted butter over the cracker crumbs.
