COCA-COLA PORK ROAST
There are lots of cola/meat recipes on this site, this one is a little different. I found this in a crockpot cookbook that my folks gave me for Christmas. I tweaked it a bit, but still--great stuff!

Yield 1 roast with lots 'o gravy

Steps:
- Rub the roast with salt and pepper then place it in the crockpot.
- Add soup mix and coke.
- Cook on low 8 hours or high for 4.
- Before serving dump liquid from crockpot into a pot.
- Skim fat.
- To the remaining juices add salt and pepper to taste and a dash of Kitchen Bouquet.
- Bring mixture to a boil.
- Remove a cup of the liquid and add corn starch to thicken.
- Add corn starch mixture to the rest of the juices.
- Cook until it reaches desired consistency.
- WONDERFUL GRAVY!

ROAST PORK LEG IN COCA COLA
Even though this pork roast takes 3 to 4.5 hours to cook it is moist, not dry like so many pork roasts that I have had in restaurants. My Mom always cooked this roast on special occasions when I was a child. I use this recipe on a lazy day; I pop it into the oven and forget about it for 3.5 hours. I serve this roast with marinated pineapple rings, potato salad, beetroot and a large green salad. Marinate the pineapple rings first thing in the morning then pop them onto a baking sheet for 20minutes when browning the roast.

Steps:
- Marinated canned pineapple rings.
- Mix the cooking oil, vinegar, brandy and chopped mint together.
- Drain the juice off of the pineapple rings.
- Put the pineapple rings into a container with a lid pour the above mixture over the pineapple rings cover with lid and refrigerate.
- Roast leg of pork in Coca Cola.
- Preheat the oven to 120cC (250F).
- Rub the salt, pepper and dry mustard powder into the leg of pork.
- Place leg of pork in a roasting dish that has a lid, pour the Coca Cola over the pork leg cover roasting dish with lid, place in the oven and bake for 3 to 4 hours, remove the lid ½ hour before serving increase the oven temperature to 200C (425F) and brown the pork leg.While browning the leg of pork put the marinated pineapple rings onto a baking sheet, put into the oven and brown for 20 minutes.

CROCK POT COCA-COLA PULLED PORK
This is a modified version of a friend's recipe for pulled pork. Hers is always a hit at potlucks. The only revisions I made to her original recipe were to suit my family's taste. This is the easiest, tastiest pulled pork. Set the Crock Pot before you leave the house for work and return home to a wonderful aroma and a main dish that is ready when you are. It turns out slightly sweet and smokey with a hint of heat. The Coca-Cola makes the meat fall-off-the-bone tender. I could make my own barbecue sauce but choose to use Famous Dave's Rich & Sassy sauce instead. It's easier, and my family loves it! Use your favorite brand of barbecue sauce if Famous Dave's brand is unavailable in your area. Serve on a burger bun or on its own and enjoy!

- Place roast in a 5 quart crock pot. Season with garlic, onion, black pepper and cayenne pepper. Add liquid smoke and pour in Coca-Cola until it reaches nearly the top of the roast (or covers it depending on the cut of meat).
- Set Crock Pot on low heat and cook for 8-10 hours.
- When ready to serve, remove roast from Crock Pot to a platter. Remove any bones and trim all fat. With a fork, begin "pulling" pork apart into thin shreds. Add barbecue sauce and fold into meat.
- Serve pulled pork on a burger bun or on its own.
- Note: If preparing this dish for a potluck, pour 1 cup of Crock Pot liquid into a measuring cup and discard the remainder. Then return pulled pork to Crock Pot, set on warm or low heat setting, add 1/2 cup of reserved liquid (to keep the meat from drying out) and cover until ready to serve. If the meat is in the Crock Pot for more than one hour, add more liquid as needed for moisture.
OLD SOUTH COCA-COLA PORK LOIN
Steps:
- Combine all the ingredients except for the meat, to form a marinade. Set the pork roast in a plastic bag with a zip-type seal, pour in the marinade and seal the bag. Set the plastic bag in a serving bowl large enough to steady the roast and keep the marinade ingredients from spreading away from the roast. Let stand for 24 hours or overnight in the refrigerator, patting and turning the bag every few hours to ensure the meat marinates evenly. This helps the roast absorb the marinating liquids and creates a tender, juicy and flavorful roast. Remove roast from marinade and discard the marinade. Place roast, fat side up, on rack in roasting pan. Insert roast meat thermometer so the bulb is centered in the thickest part. Do not add water. Do not cover. Roast in a slow 325 degree preheated oven until the thermometer registers to 175 degrees. Allow 30 to 40 minutes per pound for roasting, so for a 5 pound loin roast, you would be roasting for about 2-1/2 to 3 hours. During last 1/2 hour of cooking time, brush on the glaze. If you prefer, you can just as easily cook on the grill or in the smoker. Remove from the oven and out of the pan onto a platter; cover with foil tent to seal steam and rest the meat 15 minutes before slicing and this results in a much juicier roast. NOTE: Alternatively, you can slow-roast. Instead of roasting at 325, use a slow oven at 250 - 275 degrees, and allow almost twice as long. The meat will be even more tender. Use your meat thermometer or whatever means you like to achieve desired doneness.
ROASTED LEG OF PORK

Steps:
- Preheat the oven to 430 degrees F (220 degrees C).
- Combine olive oil, sage, garlic powder, onion powder, and salt in a small bowl.
- Rinse pork leg and pat dry with a paper towel. Rub seasoned olive oil onto the pork leg.
- Slice onion and separate layers into rings. Place onion rings and garlic halves in the bottom of a roaster. Place pork on top of onions and garlic.
- Roast in the preheated oven for 40 minutes. Reduce oven temperature to 355 degrees F (180 degrees C) and roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 1 hour 20 minutes more.
- Remove from the oven and slice and serve.

- Combine all Marinade ingredients except roast, in a large ziploc baggie or large glass measuring pitcher, whisk to mix. Place roast into baggie with the marinade ingredients, seal bag closed well with as little air as possible. *If you don't have one large enough, pour marinade into a baking dish, add pork and turn several times to coat, ending with fat side-up. Cover well with plastic wrap.
- Let stand for 24 hours or overnight in the refrigerator, turning bag several times to ensure the meat marinates evenly. If using a baking dish, just let marinate overnight, then turn over, fat side-down the next morning for a few hours, then turn again before roasting while coming to room temp while oven preheats, (keeping covered).
