ROASTED PIZZA POTATOES

Steps:
- Preheat the oven to 400 degrees F.
- Arrange the potatoes in a 9-by-13-inch baking dish and season with the dried oregano and a good pinch of salt. Drizzle with the oil and toss to coat with your fingers. Roast for about 1 hour. (I went 1 hour and 10 minutes, just for extra browning.)
- Remove the potatoes from the oven and switch the oven to broil.
- Sprinkle the grated cheese over the potatoes and arrange the pepperoni in a single layer over the cheese. Broil for 2 to 3 minutes; don't take your eyes off it (see Cook's Note)! This happens fast, and all we want is browning and bubbling, and for the pepperonis to crisp and curl. Serve immediately with pizza sauce and a sprinkle of parsley or chives!

- Preheat oven to 425 degrees F (220 degrees C). Cover a baking sheet with aluminum foil. Lightly grease the foil.
- Arrange the potato slices on the prepared baking sheet, and drizzle with oil. Bake 20 minutes in the preheated oven.
- Remove potatoes from heat, and turn. Drizzle with sauce, and top with green pepper, onion, mushrooms, and pepperoni. Top with mozzarella cheese.
- Return topped potatoes to the oven, and continue baking 10 minutes, or until cheese is melted.

- Place a rimmed baking sheet in the center rack of the oven and preheat the oven to 425 degrees F.

- Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until tender. Drain and pat dry. , Unroll dough onto a 14-in. pizza pan coated with cooking spray; flatten dough and build up edges slightly. SLICED BAKED POTATOES
An easy way to give the bland potato a lot of new flavor ! The light coating of butter and cheese gives the potatoes a crisp outside. These are fun to make, and look delightful ! Oven baked, or microwave. Oven bake time: appx. 1 hour. Microwave bake time 16-20 minutes.

- Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
- Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
- Put potatoes in a baking dish. Fan them slightly.
- Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
- Bake potatoes at 425 degrees for about 50 minutes.
- Remove from oven. Sprinkle with cheeses.
- Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
- To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
- Sprinkle with melted butter and herbs.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
- Sprinkle with salt, and serve.
- Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
- After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.

- -Lightly spray 14inch. pizza pan. Place dough on pan. Bake at 400 for 6min. or just until crust begins to brown.
- -When potatoes are cool enough cut them into 1/2 inch. slices. In bowl combine margarine, garlic powder, and dried italian seasoning. Add potatoes and gently toss to coat. Spread sour cream over pizza crust. Top with potato mixture, then bacon, onions and both cheeses.

- Preheat oven to 450°F
- Clean potatoes and pierce with a fork.
- Bake 45 minutes.
- Chill on counter for 20 minutes.
- Cut potatoes in half and scoop out flesh, leaving 1/4in thick shell with skin.
- Set flesh aside.
- Chop 1/4 of pepperoni.
- Cut remaining pepperoni slices in half, set aside.
- In a med bowl, mash together potato flesh, sour cream, salt and pepper.
- Stir in chopped pepperoni.
- Spoon mixture back into shells evenly and arrange on a baking sheet.

- Saute potato and onion slices in olive oil in skillet until onions appear transparent. Drain well.
- In crockpot, combine potatoes, onions, cheese, pepperoni and salt.
- Pour pizza sauce over top.
- Cover, cook on low 6-10 hours or until potatoes are soft.
- I usually let mine cook about 8 hours.
- You can also add any of your fave pizza toppings to these. I'd just suggest that you saute them with the potatoes and onions.
