- Prepare your favorite flatbread. I used premade pizza dough, rolling it thin, brushing it with olive oil, sprinkling with rosemary, then transferring to a hot oven until crispy. Another option? Feel free to purchase premade... just brush it with oil, sprinkle the rosemary, and broil it for 2-3 minutes. Allow it to cool completely before slicing into triangles, then set aside.
- Drizzle a little olive oil into a skillet over medium / high heat. Add the thinly sliced onions, continually stirring until they're soft, translucent, and carmelized (add more oil if they begin to stick). Once finished, set aside.
- Preheat your oven to 400 degrees. Prepare three (or more depending on the size) ramekins by drizzling a tiny bit of olive oil and balsamic vinegar into the bottom of each.
- In a small bowl, mix the softened goat cheese with the chives and parsley, using a fork, then set aside.
